APPLESAUCE OATMEAL MUFFINS

This is an awesome recipe that my wife just made this morning. The TOPPING is the key to making these extra yummy! Tasty way to get your morning oats!

Applesauce Oatmeal Muffins image

Steps:

  • Heat oven to 400.
  • Line 12 medium muffin tins with paper cups(optional)(spray muffin tin with cooking spray w/o paper cups).
  • Combine oats, flour, cinnamon, baking powder and baking soda.
  • Add applesauce, milk, brown sugar, oil and egg white.
  • Mix just until dry ingredients are moistened.
  • Fill muffin cups almost full.
  • For topping combine remaining ingredients. Sprinkle evenly over batter.
  • Bake 20-22 minutes until deep golden brown.
  • Serve Warm.

1 1/2 cups oats (quick or old-fashioned)
1 1/4 cups flour
3/4 teaspoon cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1 cup unsweetened applesauce
1/2 cup skim milk
1/2 cup firmly packed brown sugar
3 tablespoons vegetable oil
1 egg white
1/4 cup oats (quick or old-fashioned)
1 tablespoon firmly packed brown sugar
1/8 teaspoon cinnamon
1 tablespoon margarine, melted

Oat Applesauce Muffins image

Steps:

  • Place oats in a small bowl, pour in buttermilk. Let sit for two hours at room temperature.
  • Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • In a large bowl, stir together whole wheat flour, baking powder, baking soda and brown sugar. Stir in oat/buttermilk mixture, applesauce and egg; mix well. Pour batter into prepared muffin cups.
  • Bake in preheated oven for 30 minutes, until a toothpick inserted into center of muffin comes out clean.

Applesauce-Oat Muffins image

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper muffin liners. Whisk together 1 1/2 cups oatmeal, the flour, baking powder, baking soda, and 1/8 teaspoon of cinnamon in a mixing bowl; set aside.
  • Whisk 1/2 cup brown sugar, egg white, applesauce, and milk together in a mixing bowl until smooth. Stir in the flour mixture until evenly moistened; it's ok if small, dry lumps remain. Pour the batter into the prepared muffin tin. Stir the 1/4 cup oatmeal, 1/4 cup brown sugar, 1 tablespoon cinnamon, and the melted butter in a small bowl; sprinkle this mixture over the muffins.
  • Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes. Cool at least 10 minutes before serving.

I originally found this recipe on SparkRecipes, but I've made a few adjustments. The milk, sugar, and flour can all be substituted for cow's milk or soy milk, splenda, and whole wheat or regular all purpose. I love the fact that there is no oil or butter needed with this recipe. These make an excellent snack or breakfast. Enjoy!

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
  • Combine applesauce, oil, orange juice, egg, and vanilla extract in a large bowl; mix well.
  • Combine whole wheat flour, all-purpose flour, oats, brown sugar, white sugar, cinnamon, baking soda, and salt in another bowl. Add dry mix to wet mix, stirring just until moistened. Gently fold in cranberries; do not overmix. Divide batter evenly between the prepared muffin cups.

Applesauce Oatmeal Muffins image

Steps:

  • Soak the oats in water for about one hour.
  • Preheat the oven to 400 degrees.
  • Spray muffin pan with cooking spray.
  • Combine the oat mixture with the applesauce and egg whites, and mix until combined.
  • In a separate bowl measure and whisk the dry ingredients together.
  • Add wet ingredients to dry and mix until just combined. Add nuts or raisins if desired.
  • Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
  • Combine the cinnamon and sugar and top each muffin with some of the mixture.
  • Bake for 20-25 minutes or until done.
  • Remove from pan, cool and enjoy.
  • These can be frozen and reheated in the microwave for a quick breakfast.
