This is a delightful twist on a Southern favorite.-Sue Draheim, Waterford, Wisconsin

Oatmeal Pecan Pie image

Steps:

  • In a large bowl, whisk the eggs and sugars. Gradually whisk in the corn syrup, milk, butter, vanilla and salt. Stir in pecans, oats and coconut. Pour into pastry shell., Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean (cover edges loosely with foil if necessary to prevent overbrowning). Cool on a wire rack.

2 large eggs
1/2 cup sugar
1/2 cup packed brown sugar
3/4 cup corn syrup
1/2 cup whole milk
1/4 cup butter, melted
1 teaspoon vanilla extract
Dash salt
2 cups pecan halves
3/4 cup quick-cooking oats
1/2 cup sweetened shredded coconut
1 unbaked pastry shell (9 inches)

**This recipe makes 2 pies. My daughter requested that I make this for her birthday instead of traditional birthday cake. It is a family favorite in our home.

Steps:

  • 1. Combine butter, sugar, corn syrup & oats.
  • 2. Stir in eggs & vanilla.
  • 3. Pour into pie pans.
  • 4. Top with pecans.
  • 5. Cover edges of crust with foil.
  • 6. Bake at 325' for 25 minutes.
  • 7. Remove foil and bake 20-25 more minutes more or until pie is set in center.

1 1/2 c butter, melted
1 1/3 c sugar
1 1/3 c dark corn syrup
2 c oats
6 large eggs
1 Tbsp vanilla
1-1 1/2 c pecans, chopped
2 regular pie crusts (not deep dish)

OLD-FASHION OATMEAL PIE

This great pie recipe goes back over 100 years. The recipe came from my grandmother's grandmother who was living in Charleston, South Carolina during the 1860's. Family history has it, that during the Civil War, since pecans were in short supply in the South, oatmeal was substituted for the traditional pecan pie and the results were astonishing. Now served at every family gathering since that time.

  • Preheat oven to 350°F.
  • Beat eggs until frothy.
  • Combine sugar, flour, cinnamon and salt in a small bowl.

  • Roll dough into a 11" circle; fit into a 9" pie plate, light sprayed with cooking oil. Fold edges under and flute.
