OKA ITA (TONGAN CEVICHE)

Ceviche and other raw fish preparations are very popular in the South Pacific. This version hails from Tonga. Posted for ZWT 7.

Oka Ita (Tongan Ceviche) image

Steps:

  • Chill all ingredients until cold, prior to making. Combine all the ingredients in a bowl and mix well.
  • Season and serve immediately.The ota ika will separate if not eaten on the same day.
  • Serve with additional chillies on the side.

3/4 lb tuna, filets (sushi grade)
2 tomatoes, diced
1 green pepper, seeded and diced
1 -3 hot red chili pepper, diced (Serrano or Thai)
1/2 cup cucumber, peeled, seeded and diced
1 cup lime juice, fresh
2 cups coconut milk, lite is preferred
salt & pepper, to taste

OKA - SAMOAN RAW FISH AND COCONUT MILK

This is a Samoan raw fish dish, similar to Kokoda and ceviche. Use a firm white fish. If possible make your own coconut milk, but canned will do.

Oka - Samoan Raw Fish and Coconut Milk image

Steps:

  • Cut fish into small cubes about 1cm. Place the fish in a glass dish with 1/3 cup of the lime juice and 1/2 tsp salt. Place in the fridge for at least 2 hours but best to leave overnight.
  • Remove fish from dish and wash and drain well.
  • Mix the coconut milk with the capsicum, chili, onion and remaining lime juice.
  • Add well drained fish and season with salt and pepper.
  • This dish should be eaten on the day as the coconut milk will spoil.
