GRILLED TOMATO AND CHEESE
Butter does more for a grilled cheese than just browning the bread. Using cultured butter, one made with fermented cream, can add depth and a touch of sweet and tangy richness, thereby elevating the sandwich to new heights.

Steps:
- Thinly slice the tomatoes and lay them on a paper towel. Sprinkle with salt and let sit to release any water, about 15 minutes. Pat dry.
- Lay out 4 slices of the bread on a work surface. Layer each with 2 slices of cheese, making sure that they cover to the edges. Follow with 2 slices of tomato and then 1 more slice of cheese. Close the sandwiches with the remaining bread. Thinly and evenly spread the butter on both sides of the bread using about 1 1/2 tablespoons of the butter for each sandwich.
- Place 2 sandwiches into a nonstick medium skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches.
CLASSIC AMERICAN GRILLED CHEESE

- Preheat the griddle to medium heat.
- Build the sandwiches with 1 slice of white cheese on 4 pieces of bread and 1 slice of yellow cheese on the other 4 slices of bread. Close the sandwiches and butter both sides. Place on the griddle; cover with a metal bowl and let the sandwiches get a nice golden brown, 2 to 3 minutes. Flip, cover again and cook until the cheese is melted and the sandwiches are golden brown, 2 to 3 minutes.
GOOD OLD-FASHIONED AMERICAN GRILLED CHEESE AND TOMATO SOUP

- Heat a large nonstick pan over medium-low heat. Place 5 slices* of cheese in between two slices of bread (two on each side and one in the middle). Spread about 1 tablespoon butter on each exterior side of the bread. Remember, crust-to-crust is a must. Repeat with the remaining ingredients. Place the first side in the pan (cooking in batches if necessary) and "dome" with an inverted large metal bowl or pan lid to create the proper vortex of heat. Cook until golden brown, 3 to 4 minutes, then flip and continue to cook until the cheese is gooey and bread is golden brown, 3 to 4 minutes more.
- Cut, slowly separate and watch as the cascade of gooey good ol' American cheese catches the sunlight streaming through the kitchen window and throws a glow of warm orange light throughout your entire house. Repeat with the remaining sandwiches. Serve with the Tomato Soup.
- *I know this sounds excessive, but it ensures the most possible ooey-gooeyness. If you're watching the intake, you can scale back to 3 slices.
- Heat a large Dutch oven or soup pot over medium heat. Add the butter, onions, carrots, celery, chile flakes and a couple pinches of salt and pepper. Sauté until translucent, 10 to 12 minutes. Add the tomato paste and cook for an additional minute. Deglaze with the sherry while scraping up any brown bits from the bottom of the pot. Add the tomatoes, bay leaves and stock. Simmer until everything is cooked through and very tender, about 1 hour.
- Discard the bay leaves and blend the soup until completely smooth and uniform in texture using an immersion blender. Add the heavy cream and adjust the seasoning. Serve!
OLD FASHIONED GRILLED CHEESE
I never seen anyone make this recipe before except the women on my mother's side of the family. It is a very old recipe.

Steps:
- In a 1 or 1.5 Pt bowl, whisk together one large egg with 2 - 3 TBSP of Milk or Cream This is to make it not too runny/liquid but to make the egg able to coat both sides of the 2 halves of bread.
- Prepare a 9 inch skillet by either spraying with cooking spray or buttering it generously.
- Preheat skillet over medium heat. The skillet MUST be hot before frying bread slices or unwanted results may occur.
- Quickly coat both sides of one slice of bread in the egg/milk or cream mixture.
- Fry in the hot skillet on both sides till golden brown(Time will vary because of several factors but usually 60 seconds or less so keep an eye on it)
- Put the first fried slice on a clean plate.
- Coat second slice of bread in the egg/milk or cream & fry both sides.
- This time when both sides are fried; lay the slice of your favorite cheese on the slice of fully cooked bread in the skillet and cover with first slice of bread.
- Turn over and wait 15-30 seconds until the cheese melts.
- Enjoy!

- Spread 1/2 tablespoon of butter on one side of each piece of bread. Lie the slices of Cheddar on one of the slices of bread on the unbuttered side. Sprinkle the parsley, basil, oregano, rosemary, and dill on the other slice of bread on its unbuttered side. Sandwich the two slices of bread together with the buttered sides facing outwards.
- Heat a skillet over medium heat. When skillet is hot, gently lie the sandwich in the skillet; cook on each side for 3 minutes until cheese has melted.
