CLASSIC BAKED MACARONI AND CHEESE
Think Stouffer's without the freezer. While it can be enjoyed straight from the pot, this macaroni and cheese has a slightly looser sauce than the stovetop variety to allow for thickening in the oven. Bread crumbs, while optional, make it truly spectacular.

Steps:
- Cook pasta in a large pot of salted boiling water until it's barely al dente. (It should be more al dente than your average pasta: It's going to continue to cook in the oven.) Drain and set aside.
- Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.
- Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.
- Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).
- Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
- Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. Place on prepared baking sheet and bake until macaroni and cheese is bubbling, thickened and creamy, and bread crumbs are evenly golden brown, 25 to 30 minutes. Let cool slightly before serving.

SUPER DELUXE OLD FASHIONED MACARONI AND CHEESE
Steps:
- Preheat oven to 350 degrees F. Meanwhile, melt 4 tablespoons of the butter in a non-reactive saucepan. When bubbly whisk in flour and cook for a couple of minutes, stirring every now and then. Slowly whisk in the milk and bring to a boil. Reduce heat to low and simmer, whisking on occasion for 3 to 4 minutes. Remove pan from heat and whisk in grated cheese. Stir vigorously just until cheese has melted. Then whisk in heavy cream to adjust the texture and season to taste with salt and cayenne pepper. In a mixing bowl combine sauce with sun dried tomatoes and drained macaroni and adjust seasoning. Transfer mixture to a 13 x 9-inch baking pan and spread it out evenly. Sprinkle bread crumbs on top and dot with remaining 4 tablespoons of butter. Bake until hot and bubbly, about 30 minutes. Let stand 5 minutes before serving.

- Cook macaroni in boiling water until almost tender; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, salt, mustard, pepper and pepper sauce until smooth. Cook for 1 minute or until bubbly. Stir in the macaroni, milk and 4 cups cheese. , Transfer to an ungreased 13x9-in. baking dish. Cover and bake at 350° for 45-50 minutes or until bubbly. - 1. Preheat oven 350 F.
- 2. prepare 2 cups elbow macaroni, makes 4 cups cooked; drain macaroni.
- 3. Add butter and salt, stir on medium to low-medium heat.
- 4. Add cheese(s), stir until gummy.
- 5. In separate bowl add 3 eggs; whip well; add 1/2 cup sour cream mix well.
- 6. Add sour cream mixture to macaroni & cheese(s), mix well, add milk, stir until mixed well.
- 7. 9X9 or 9X13 deep dish, spray cooking spray into dish; pour macaroni & cheese into dish.
- 8. Place in center of oven; bake for 40-45 minutes.
- 9. Add shredded cheese over Macaroni & cheese bake for additional 5 minutes or until melted.

There is another recipe on Recipezaar for Mac and Cheese from Paula Deen that is a bit different than this. This version has more cheese and I prefer it.

- Preheat oven to 350 degrees.
- Lightly butter an 8x12" baking dish.
- In a pot of boiling salted water, cook the macaroni until al dente. Drain, transfer to a bowl.
- Add two cups of the cheese and toss until melted.
- In another bowl, whisk the eggs with the sour cream.
- Add the milk, butter, and 1/2 teaspoons salt.
- Stir the mixture into the macaroni and pour it into the prepared baking dish.
- Sprinkle the remaining cheese on top.
- Bake for 35 minutes, until bubbling and cheese is melted.
- Let the macaroni and cheese stand for 15 minutes before serving.

I saw this recipe on Paula's Home Cooking on the Food Network. I haven't tried it yet, but it looks great! (There's a secret ingredient that adds extra flavor and richness to the dish.)
