ORANGE JALAPENO GLAZED BACK RIBS
These ribs have a bit of a kick to them. If you don't like it really hot, cut back on the jalapenos.Unknown source

Steps:
- 1. preheat oven to 325°. Remove the thin papery membrane from the underside of rib racks if present; slice the tip of a small knife under the membrane at the third rib and loosen until you can peel it off. Cut each rack crosswise in half; season to taste with salt and pepper.
- 2. To make the glaze, mix all ingredients in a small pan; heat to simmering. Cook, uncovered, over medium low heat, stirring occasionally, for 10 minutes. Let cool slightly.
- 3. Place ribs in a single layer in one large or two small roasting pans. Cover the pans tightly with foil. Cook in the oven until the meat is fork tender, about 1 1/2 hours. Remove ribs from the oven; pour off drippings.
- 4. Increased oven setting to 375°. Brush ribs with glaze. Return to the oven and cook, uncovered, until the ribs are glazed, watching carefully, about 10 minutes. Makes six servings.
- 5. Note: to cook ribs on the grill, prepare grill for indirect grilling. Place ribs on grid over a drip pan or over off burners for gas grills. Grill, covered, till the meat is fork tender, about 1 1/2 hours. Brush with glaze during the last five minutes.

- In a small bowl, combine the first six ingredients; rub onto both sides of ribs. Place ribs, meat side up, on a rack in a foil-lined roasting pan. PORK WITH ORANGE JALAPENO GLAZE

- Combine all ingredients and pour over the pork. Refrigerate for 24 to 48 hours. Preheat oven to 375 degrees F. In hot saute pan with 2 tablespoons of peanut oil, brown pork loin on all sides. Place it in the oven for 30 to 45 minutes until internal temperature reaches 150 degrees F. Remove pork from the oven; let rest on a rack for 10 minutes. Slice.
- Reduce orange juice to 1/3 cup. Combine sugar, ginger, jalapeno, orange zest and rice wine vinegar. Cook in a 1-quart pot until it's a medium-dark amber color. Stir in orange juice, butter and salt. Strain through a sieve and keep warm. Arrange pork on serving platter and drizzle with sauce.
ORANGE GLAZED COUNTRY PORK RIBS
This is a wonderful way to cook country style ribs. The end result is a slightly sticky, somewhat sweet tasty rib dish

Steps:
- Spray a 3 or 4 quart slow cooker with cooking spray; place ribs, onions and garlic in cooker.
- Cover; cook on low setting for 8 to 9 hours.
- About 10 minutes before serving, remove ribs from slow cooker; place on serving platter and cover to keep warm.
- In 2 cup microwave safe measuring cup, combine all sauce ingredients; mix well.
- Stir in 3/4 cup juices from slow cooker; discard remaining juices.
- Microwave sauce on high for 2 to 2 1/2 minutes or until mixture boils and thickens, stirring once halfway through cooking.
- Pour sauce over ribs. To make them a bit sticky, I do it one of two ways depending on time. You can either drain all the grease from the crock pot and add the ribs and the sauce back to it, then cook on high uncovered for about another hour or if pressed for time, you can transfer the sauce covered ribs to a shallow baking pan and caramelize under the broiler, basting frequently.
- (I can personally think of all sorts of things I might try adding to this, but until I have tried them out, I will wait to post them lol. Let me know how it turns out!).

SWEET JALAPEñO GLAZED RIBS
This is a great BBQ recipe or in the oven. Not to time consuming, but a long time to cook. You can tweak this recipe any way you want and I do it a little differently every time.

Steps:
- Mix dry rub ingredients and rub onto ribs. Let sit in refrigerator at least 30 minutes to two hours.
- Wrap ribs in foil and place on grill (or oven) on low heat for 1 1/2 - 2 hours or until very tender.
- While ribs are cooking mix glaze ingredients and simmer until mixture begins to thicken.
- When ribs are tender remove from foil and place onto grill (or cooking sheet in oven) and turn heat up to medium brush glaze over ribs.
- Cook for another 20 minutes.
- Serve ribs with remaining glaze for dipping.

- Combine all ingredients and mix well.
- Pour over the ribs. Cover and marinate several hours or overnight in the refrigerator. Preheat the oven to 325 degrees. Remove ribs from the marinade and transfer marinade to a saucepan. - Place ribs, 1/2 cup soy sauce, 3 minced garlic cloves, 2 tsp. cumin seeds, and 1 tsp. red pepper flakes in a large pot; add water to cover completely. Sprinkle dark-green scallions and citrus zest over.
