ORANGE-PECAN GRANOLA

Our recipe for homemade granola "bars," which are actually chunks of the baked mixture, is easy to make and a wonderful snack. These ingredients are an excellent combination for an energy boost.

Orange-Pecan Granola image

Steps:

  • Preheat oven to 350 degrees. Put oats, flakes, sugar, nuts, zest, nutmeg, and cinnamon in a medium bowl. Melt butter with honey in a saucepan over low heat; stir into oat mixture.
  • Spread mixture in a 7-by-11-inch baking pan; bake until just golden, about 10 minutes. Let cool in pan (mixture will harden). Break cooled mixture into large chunks.

1 cup old-fashioned rolled oats
1 cup soy flakes
1 cup wheat flakes
1/2 cup packed light-brown sugar
1 cup coarsely chopped pecans
Finely grated zest of 1 orange
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground cinnamon
1/2 cup (1 stick) unsalted butter
1/4 cup honey

HONEY-PECAN GRANOLA

Use this homemade granola as a topping for yogurt, enjoy it as a cereal with milk, or simply snack as is. It's easy to make and is more economical than store-bought.

Honey-Pecan Granola image

Steps:

  • Preheat oven to 300 degrees. In a large bowl, combine oats, pecans, butter, honey, and salt; mix well to coat. Transfer to a parchment-lined rimmed baking sheet and spread in an even layer. Bake until oats are lightly golden, 30 minutes, stirring halfway through. Let cool completely on sheet.

Ultimate Irresistible Granola image

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, stir together the oats, almonds, walnuts, pecans, sesame seeds, wheat germ, coconut and sunflower seeds. In a small pan over medium heat, stir together the oil and honey. Cook and stir until blended. You could also do this in a large measuring cup in the microwave, heating for about 2 minutes and 30 seconds. Pour over the oat mixture, and stir to coat evenly. Spread out in an even layer on two cookie sheets.
  • Bake for 20 minutes in the preheated oven, until the oats and nuts are toasted. Immediately after it comes out of the oven, stir in the raisins and dried cranberries. Let stand until cooled, and stir again to break up any large clusters. Store in an airtight container at room temperature for up to two weeks, but I guarantee it won't be around that long!

  • In a small bowl, combine the orange zest and sugar. Use your fingers to rub the zest into the sugar until it’s bright orange and fragrant. This step will ensure that your granola is infused with orange flavor.
  • In a large mixing bowl, combine the oats, pecans, salt, cinnamon and orange sugar. Stir to combine. Pour in the coconut oil and maple syrup. Mix well.
  • Pour the granola onto your prepared baking sheet. Spread the granola into an even layer. Bake for 24 to 28 minutes (if you used honey instead of maple syrup, check at 22 minutes), stirring halfway, until the granola is turning lightly golden in color. The granola will crisp up as it cools.
