ORANGE DREAMS

A fellow teacher shared this recipe with me. We have several great cooks on our teaching staff, and each of us takes turns bringing special treats to the lounge. These moist, chewy cookies with a pleasant orange flavor are a favorite.-Susan Warren, North Manchester, Indiana

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch fluted tube pan (such as Bundt®).
  • Sift flour, baking powder, salt, and baking soda together in a bowl; set aside.

Add flour alternately with sour cream in 3 additions, beginning and ending with flour. Beat until smooth. Scrape the sides of the bowl with a rubber spatula. Spread evenly in the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 15 minutes. Cool on a wire rack for 10 minutes, then unmold the cake onto the wire rack to cool completely.
  • While the cake is cooling, bring orange juice, sugar, and orange zest to a boil in a small saucepan over medium-high heat. Reduce heat and cook until syrupy, about 15 minutes. Remove from heat and whisk in butter, 1 tablespoon at a time. Drizzle warm syrup over cake slices.

ORANGE-SOAKED RAISIN OATMEAL COOKIES

A long time ago I came across a very interesting recipe for oatmeal cookies. I gave it a try, and my kids loved them! Somehow the recipe was lost, so I played around and came up with these cookies. I made them for my husband's co-workers for Christmas, and they were a huge hit.

Steps:

  • 1. Place raisins into a small container and pour orange juice over them; just enough juice to cover raisins. Cover and put into the refrigerator for 24 hours or more so the raisins have adequate time to soak up the orange juice.
  • 2. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each egg. Beat in vanilla. In a separate bowl, whisk together flour, baking powder, salt, baking soda, and nutmeg. Add to the creamed mixture. Stir in raisins along with any juice, orange peel, and oats. Fold in white chocolate candy pieces.
  • 3. Drop by rounded teaspoonfuls onto greased or parchment-lined baking sheets. Bake at 375 for 10-12 minutes or until edges are lightly browned. Cool on wire rack. Yield: 5-6 dozen.

1 c raisins
3- 4 Tbsp orange juice (or just enough to cover raisins in small container
1 c butter, softened
2 eggs
3/4 c granulated sugar
3/4 c packed brown sugar
1 tsp vanilla extract
2 c all purpose flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/8 -1/4 tsp ground nutmeg
1 -2 Tbsp grated orange peel
2 c old fashioned oats
3/4 pkg hershey's bliss white chocolate candy, pieces cut into quarters

SPICED ORANGE CRUMBLE COOKIES

Citrus in three forms - fresh zest, juice and preserves - gives buttery baked goods a nice bright flavor. This crisp brown sugar cookie is baked with orange marmalade, then topped with a grating of orange zest after it comes out of the oven for layers of citrus freshness. With a dash of clove and black pepper, it's reminiscent of the piney, spiced scents of winter fir. You'll love the aroma that fills your kitchen while they bake, and enjoy them with tea and coffee.

Steps:

  • Position a rack in the middle of the oven and heat the oven to 350 degrees. Butter a 9-inch springform pan.
  • In a medium bowl, combine the flour, almond flour, brown sugar, salt, cloves and black pepper. Rub the butter into the flour mixture using your fingers until small pebbles form. (Alternatively, use a food processor to pulse the dry ingredients with the butter.) Pour the cream over the mixture, stir just until combined and squeeze until the dough forms ¾-inch clumps. Transfer a little less than half of the crumble (1½ loosely packed cups/210 grams) to a small bowl and refrigerate.
  • Transfer the remaining dough to the buttered pan and flatten into an even layer by pressing into the bottom of the pan with a glass. Bake on the middle rack until the edges are golden brown and begin to pull away from the sides of the pan, about 22 to 25 minutes. Cool in the pan for at least 10 minutes. If you tap the surface of the cookie, it should sound hollow.
  • Spread the orange marmalade in an even layer over the surface. Sprinkle the reserved crumble over the top. Return to the oven and bake until the top is golden brown, about 35 minutes. Zest the orange directly over the top while the crumble is still warm. Cool completely in the pan, then run a knife along the edges of the crumble before releasing the sides. Dust with confectioners' sugar, cut into wedges and serve.

1/2 cup/115 grams cold unsalted butter, cut into ½-inch cubes, plus more at room temperature for brushing the pan
1 1/3 cups/175 grams all-purpose flour
3/4 cup/80 grams almond flour
3/4 cup packed/160 grams dark brown sugar
1 teaspoon kosher salt (Diamond Crystal)
1/4 teaspoon ground cloves
1/4 teaspoon freshly ground black pepper
1/4 cup/57 grams heavy cream
6 tablespoons/142 grams orange marmalade
1 whole orange
Confectioners' sugar, for dusting
