Mix well. 2 In another bowl, mix the brown sugar, granulated sugar, and remaining cinnamon. 3 Add butter to a 10 inch Pyrex pie deep dish and put in the oven (deep dish Pyrex is great) At 400 degrees. 4 When the butter is completely melted remove from oven. 5 Pour the batter into the Pyrex dish and put back in the oven for 20-25 minutes. The edges will begin to puff. 6 Remove the half-way cooked batter from the oven and now add the apple mixture to it. 7 Just simply place the apples all over the top of the batter. 8 Next, cover the entire service with the brown sugar/sugar/cinnamon blend and put it back in the oven for another 20-25 minutes.

Found this online while searching for TOPH recipes. Fabulous recipe from The Original Pancake House! The Apple Pancake contains eggs, flour, milk, sugar, cinnamon, vanilla, butter and lots of apples. It takes about 30 minutes to bake in an iron skillet and is served all puffed up and steaming hot. The Apple Pancake really isn't much like a pancake at all. It's more a like a soufflé or really, really moist bread pudding. The only way to truly appreciate it is to try one yourself.

- In medium bowl, beat egg with wire whisk until fluffy. Stir in remaining ingredients just until flour is moistened (batter will be slightly lumpy); do not overmix or pancakes will be tough. For thinner pancakes, stir in additional 1 to 2 tablespoons milk.
- Heat griddle or skillet over medium-high heat (375°F). (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush with vegetable oil if necessary (or spray with cooking spray before heating).
- For each pancake, pour slightly less than 1/4 cup batter onto griddle. Cook 2 to 3 minutes or until bubbly on top and dry around edges. Turn; cook other side until golden brown.

- Preheat the oven to 450 degrees F.
- In an 8-inch nonstick skillet over low heat, combine the brown sugar, maple syrup, butter, 3/4 teaspoon cinnamon and a pinch kosher salt. Melt together and whisk to combine. Turn the heat up to medium and bring the mixture to a boil. Allow to boil vigorously for 2 to 3 minutes. Carefully add the apples and toss around until the apples are fully coated in the caramel. Reduce the heat to low and allow to bubble for 3 to 4 minutes, or until the apples begin to soften and appear translucent. Place the skillet onto a parchment-lined baking sheet (to catch any bubbled-over caramel) and bake for 5 minutes while you prepare the batter.
- In a large 8-cup liquid measure or large mixing bowl, beat the eggs and granulated sugar until frothy. Add the buttermilk, flour, vanilla, 1/2 teaspoon cinnamon, 1/4 teaspoon kosher salt and the nutmeg if using. Whisk to combine until no longer lumpy.
- Open the oven and carefully remove the pan. Pour the batter into the skillet over the apples, swirling around the perimeter and ending in the center. (Beginning on the sides and working inward gives the pancake better structure instead of just pouring all of the batter in the middle. This will also ensure that the pancake "souffles" evenly). Place back into the oven to bake for 18 to 20 minutes, or until the sides have risen and the edges are dark. Remove from the oven and allow to settle for a minute or two. Carefully invert on a plate. Sprinkle with flaky salt and serve immediately.

DELICIOUS PUFFY OVEN-BAKED APPLE PANCAKE!
This is a caramelized apple mixture that is prepared then baked in the pancake, and then baked in the oven in a 9-inch cake pan, then puffs up like a souffle. You can even pre-cook the apple mixture to use later, just store it in the fridge, although I have never tried this, I do think that you could likely make the apple mixture, then freeze it in small containers, to have handy when you make this pancake but I have only refrigerated the apple mixture... It is the perfect brunch, I have even served this for dinner too, this is one of my DH's favorites pancakes, he can eat a whole one all by himself LOL! I usually make two (prepare in two separate bowls) and use two cake pans. This is the most fantastic pancake you will ever try! MacIntosh apples are really the best for this.

- Set oven to 400°F.
- Prepare and grease one 9-inch round cake pan (prepare two if doubling recipe).
- TO make the apple filling: this step can be made well in advance and refrigerated.
- Sauté the apples in butter in a non-stick skillet over low heat.
- Add in lemon juice, brown sugar, vanilla and apple cider (or juice if using); cook about 7-8 minutes until soft.
- Cool for about 10-15 minutes, or refrigerate for later use.
- To make batter: Process ALL ingredients on a processor until smooth (can use a wire whisk also for this).
- Place the prepared slightly cooled apple mixture into the bottom of the prepared cake pan.
- Pour the pancake batter over the apple mixture (do not mix).
- Dot with butter bits.
- Bake for 15-17 minutes or until puffy.
- Dust with confectioners sugar.
- Serve with maple syrup if desired.

REUBEN'S APPLE PANCAKE

- Peel and core apple and slice into moon shaped pieces, 1/4 inch thick. Toss with 11/2 tablespoons sugar and the cinnamon in a bowl. Cover and refrigerate for at least 24 hours, stirring occasionally.
- When ready, preheat oven to 400 degrees. Whisk eggs and milk in a bowl until blended. Whisk in flour and vanilla until smooth.
- Heat 2 tablespoons of butter over medium heat in a shallow 12-inch nonstick ovenproof skillet until it sizzles. Drain apples and add to the pan. Cook, stirring, until apples soften, about 5 minutes.
- Melt 2 more tablespoons of butter in pan. Pour in batter and quickly arrange apples evenly before batter sets. Increase heat to medium-high and pull edges away from pan to allow batter to flow underneath and cook, sliding a wooden spatula under pancake to keep it from sticking.
- When batter is set but still wet, sprinkle with 2 tablespoons sugar. Place a cookie sheet over pan and invert the pancake onto it. Return pan to heat and add 2 tablespoons butter, swirling to coat. Slide pancake back into the pan to cook other side. Reduce heat to medium. Sprinkle top with 2 tablespoons sugar. Cook until sugar on bottom side is caramelized, about 2 minutes.
- Using cookie sheet, flip pancake out again. Slide pancake back into pan 2 more times, adding 2 tablespoons butter to pan and sprinkling with 2 tablespoons sugar each time. Adjust heat so that the sugar caramelizes but pancake doesn't burn.
- Bake in pan until brown and crisp, about 20 minutes. Slide onto a platter and serve hot.
