SNAPPER WITH FENNEL, ONION AND TOMATO

Snapper with Fennel, Onion and Tomato image

Steps:

  • Preheat the oven to 400 degrees F.
  • Pat the fish dry and sprinkle with salt and pepper. In a large oven-safe saute pan, heat the olive oil over medium heat and cook the onions and fennel until tender and golden, 8 to 10 minutes. Add the tomatoes and herbes de Provence and cook until the tomatoes begin to soften, another 5 minutes. Increase the heat to high and deglaze the pan with the wine, chicken stock and lemon juice and let bubble for 1 minute.
  • Nestle the fish fillets into the pan, sprinkle with salt and pepper and top each with a pat of butter. Place into the oven and cook until the fish is cooked through, 8 to 10 minutes.
  • Broil just until a bit crusty, about 1 more minute. Squeeze lemon juice on the fish and serve.

Four 4-ounce fish fillets (mild white fish)

Oven Roasted Red Snapper with Lemon, Tomatoes and Basil image

Steps:

  • Clean the fish by removing the gills and the small belly flap, slice all the vegetables thin.
  • On the bottom of a long gratin dish place the sliced fennel cover with the fish. Cover the fish with the slices of tomatoes, lemon slices, leaves of basil, add the broth and season to taste. Cook the fish in a 450 degrees oven for about 20 minutes. Drain off some of the natural juices, add to a blender and drizzle with olive oil to emulsify. Drizzle back over fish and serve as-is.

2 small red snapper (about 1 pound)
1 bulb fennel
2 large tomatoes
2 lemons
1 branch basil
1 cup chicken broth
Salt and pepper, to taste

  • To make the spice mix, combine the cumin, coriander, salt, pepper and sumac in a small bowl. Use 3/4 of the spice mix to season the snapper on both sides; pat the spices into the fish pushing into the slits you made earlier. Keep the remainder 1/4 of the spice mix aside for now.
  • Stuff each gut cavity with the chopped dill, and as much of the sliced peppers, tomatoes and onions as possible.
