PAM'S DELI STYLE CREAMY TUNA SALAD

Tuna salad sandwiches I made at home never tasted the same as the ones from a deli or sandwich shop. It seems like such simple ingredients, why do they taste different? So I began experimenting. This is my version.

Pam's Deli Style Creamy Tuna Salad image

Steps:

  • 1. NOTE: The large can of tuna is important instead of 2 or 3 smaller cans. The large cans give you a large piece of tuna instead of the smaller stuff and this has a better taste.
  • 2. Drain the tuna in a colander. Rinse with cool water and drain again, squeezing out any excess moisture.
  • 3. Place the celery, onion and carrot in a food processor and pulse until minced.
  • 4. Add the tuna, mayonnaise and butter. Pulse until mixed but don't make a paste out of it.
  • 5. Chill before serving.
  • 6. Variations: This is the basic recipe. From here you can add bread and butter pickles or dill pickles. Use the real thing, not relish. Caper are an excellent addition as well. Some shops add a hard boiled egg.

1 12 oz can of solid white albacore tuna
1/2 c good quality mayonnaise
1/4 c softened butter
1 medium carrot roughly chopped
1 celery stalk roughly chopped
1/4 c rough chopped onion

CREAMY AND CRUNCHY TUNA SALAD SUPREME

This tuna salad is made special with the addition of cream cheese and chopped raw carrots. Red peppers make it pretty and one or two other vegetables, fruits or nuts keep it changing and interesting. I developed this recipe after I tasted cream cheese in a salmon salad sandwich at a funeral lunch in Canada many years ago. Add baby spinach or lettuce leaves, and serve on your favorite bread or as a wrap in a tortilla.

  • Stir mayonnaise and cream cheese together in a bowl until smooth. Add tuna, carrot, and red pepper; season with pepper.

  • Open and drain the tuna cans. Place the tuna in a whatever airtight container you plan to store it in.
  • Use the egg slicer to slice the egg in two directions — slice it horizontally, then rotate and slice it vertically. Add the chopped egg to the tuna.
  • Add the rest of the ingredients to the tuna and egg and mix well with a fork, mashing the egg yolk and breaking up the bigger chunks of tuna. Taste and adjust seasonings accordingly. You may want more mayo or less mayo, more salt and pepper, more crunchy bits, etc. Adjust, adjust, adjust!
