PAN-ROASTED HALIBUT PUTTANESCA

Pan-Roasted Halibut Puttanesca image

Steps:

  • Preheat the oven to 400 degrees F. Line a small rimmed baking sheet with parchment paper.
  • Heat 2 tablespoons of the olive oil in a medium nonstick skillet over medium-high heat until it starts to shimmer. Sprinkle the halibut with some salt. Sear the halibut on both sides until lightly golden, about 2 minutes per side. Transfer the halibut to the prepared baking sheet lined and bake in the oven until the internal temperature reaches 130 degrees F on an instant read thermometer, 5 to 6 minutes.
  • Return the skillet to medium-low heat. Add the remaining 2 tablespoons olive oil. Cook the onions and garlic until slightly softened, about 2 minutes. Add the anchovy paste, olives and capers to the skillet and stir to combine. Add the crushed tomatoes and crushed red pepper flakes and bring to a low simmer for 5 minutes. Add the wine and simmer until the wine cooks off slightly, about 2 minutes. Season with salt.
  • To serve, spoon the sauce directly onto the plate and top with the halibut filets. Top with the basil and lemon zest.

Pan Seared Halibut with Roasted Heirloom Tomatoes image

Steps:

  • In a large saute pan over medium-high heat, add the grapeseed oil. Season the fish with salt and pepper and add to the pan. Sear the fish for 3 to 4 minutes on each side. Add the thyme and juice of 1/2 a lemon and baste the fish with the sauce. Remove the halibut from the pan to a serving platter. Add the olive oil to the pan and stir in the tomatoes, the garlic and the juice of 1/2 a lemon. Cook for 2 minutes and then add the parsley. Stir to combine and serve on top of the fish.

Halibut with Roasted Leeks and Tomatoes image

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the leeks in a roasting pan. Toss the tomatoes with 2 tablespoons grapeseed oil, vinegar, rosemary, thyme, and salt in a small bowl and add it to the leeks and toss. Put the pan in the oven, uncovered, and roast for 20 minutes, stirring after 10 minutes. Remove from oven when the leeks have softened to touch or when the tomatoes have begun to shrivel.
  • In a large nonstick pan, over medium-high heat, add 2 tablespoons butter and allow the butter to melt. Drizzle the halibut with remaining oil, and season with salt and pepper, to taste. Put the halibut in the buttered pan, skin side down, and reduce the heat to medium. Allow the fish to cook for 5 minutes, carefully flip and repeat the cooking process on the second side. After the second side has cooked, remove the halibut to a plate and keep warm. Return the pan to high heat. Stir in the wine with a wooden spoon, to deglaze the pan. Add the lemon juice and chicken stock. This pan sauce should reduce by half, or until thickened. Once the sauce has reduced, remove the pan from the heat and stir in the remaining butter. Arrange the halibut on serving plates, drizzle with the sauce and serve with the roasted leeks and tomatoes alongside.

1 pint grape tomatoes or 4 Roma tomatoes, halved
4 tablespoons grapeseed oil, divided

Pan-Roasted Halibut with Charred Tomatoes, Lemon & Herbs image

Steps:

  • fresh soft herbs such as dill, basil, chives and/or oregano, roughly torn
  • Set a large, high-walled ovenproof sauté pan over high heat. Once very hot, add cherry tomatoes and cook, undisturbed, until blackened in spots, about 30 seconds. Shake pan to roll tomatoes around and char all over without breaking skins, about 30 seconds more. Transfer tomatoes to a plate, season lightly with salt and set aside.
  • Set the same pan over medium heat. Add half the oil, all the lemons and crushed garlic, and season with salt and pepper. Sauté lemons until darkened in spots, 1 minute. Move lemons and garlic to one side of pan and lay in halibut fillets, skin-side down. Arrange lemons and garlic around fish and transfer pan to oven.
  • Roast halibut until tender and flaky at thickest point, about 5 minutes. Use a spatula to transfer fish to a plate. Set pan back over medium heat. Stir in half the herbs, remaining olive oil, wine and charred tomatoes. Bring sauce to a simmer and continue simmering until alcohol cooks off, about 2 minutes. Gently mash tomatoes until they burst and release their juices and sauce's flavors meld, 1-2 minutes more. Season with salt and pepper. Spoon sauce over fish, garnish with remaining herbs and serve immediately.

  • Heat oven to 450 degrees. Place fish in a baking dish, brush fillets with 1 teaspoon of oil and season with salt and chile pepper. Pan-Roasted Halibut with Clamshell Mushrooms and Lemon Butter Sauce image

Steps:

  • Heat oil and 1 tablespoon butter in heavy skillet over medium-high heat until butter melts and begins to foam. Add mushrooms and a pinch of salt; saute in hot butter and oil golden brown, about 5 minutes. Push mushroom to the edges to clear a space in the center of the skillet.
  • Season halibut on each side with salt and cayenne pepper. Place halibut fillets in the center of the skillet and cook until the fillets begin to flake, 3 to 4 minutes per side. Transfer halibut to a warm serving plate.
