Pancake recipe - evaporated milk image

Steps:

  • 1. mix all dry ingredients in a bowl.
  • 2. put in all of the liquid ingredients EXCEPT vinegar
  • 3. mix up the ingredients thoroughly but slowly
  • 4. heat grill to 375
  • 5. when ready to cook, pour in 4T of vinegar and stir in thoroughly
  • 6. use 1/3 to 1/2 cup scoop and pour onto grill
  • 7. when browned around edges, flip over and cook until done

2 cups all-purpose Flour
4 tablespoons salted butter (if unsalted increase salt by 1 tsp)
4 tablespoons Sugar
2 tablespoons baking powder
1.25 tablespoons baking soda
1 teaspoon salt
2 eggs
8 ounces evaporated milk
8 ounces water - up to 8 oz
4 tablespoons apple cider vinegar (use 0.5 tablespoon less if using regular white vinegar)

Kathie's Pancakes (Sweetened Condensed Milk) image

Steps:

  • 1. Mix the dry ingredients together in a large mixing bowl.
  • 2. In a large measuring cup (or bowl), add the sweetened condensed milk plus water to equal 2½ cups. Mix well and add lemon juice; set aside for at least five minutes.
  • 3. Add eggs and milk mixture into dry ingredients and stir until just blended (don't over-mix) batter is slightly lumpy.
  • 4. Lightly fold 4 tbsp. unsalted butter into the batter.
  • 5. Use more unsalted butter for frying at medium low temperature (start at 4 1/2 on electric stove and reduce to 4) to fry these. Flip when top surface is bubbled and edges are dry. (NOTE: I preheat my skillet on 3 1/2 and don't use butter, but a single shot of Pam just before the first cakes are poured).

2 c all-purpose flour
1 Tbsp + 2 t. baking powder
1 tsp salt
1 can(s) sweetened condensed milk (plus water to equal 2½ cups)
2 1/2 Tbsp lemon juice
2 large eggs, beaten
4+ Tbsp unsalted butter, melted
