- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine sausage, biscuit baking mix and cheese. Form into walnut size balls and place on baking sheets.
- Bake in preheated oven for 20 to 25 minutes, until golden brown and sausage is cooked through.

SAUSAGE BALLS
Sausage balls are a classic party appetizer for a crowd and they couldn't be simpler--just mix, shape and bake. We've included thinly sliced scallions in our version for subtle onion flavor and a touch of color.

Steps:
- Preheat the oven to 350 degrees F and line 2 baking sheets with parchment.
- Combine the sausage, baking mix and scallions if using in a large bowl and gently knead with your hands until the baking mix is fully incorporated. Add the Cheddar and continue to mix until the cheese is evenly distributed.
- Using a tablespoon to scoop, divide the mixture into walnut-size pieces and shape into balls with your hands. Arrange on the lined baking sheets about 2 inches apart, about 20 balls per baking sheet.
- Bake until the sausage balls are golden brown and cooked through, about 26 minutes. Serve warm or at room temperature.
SAUSAGE CHEESE PARTY BALLS
Steps:
- Preheat the oven to 375 degrees F.
- In a small bowl, combine the Cheddar, biscuit mix, onion, celery, garlic powder and pepper. Crumble sausage over mixture and mix well. Shape into 1-inch balls.
- Place the sausage balls in a shallow baking pan coated with cooking spray. Bake, uncovered, for 12 to 15 minutes or until no longer pink and cooked through. Remove from the baking pan and drain on paper towels. Serve on a platter with sauces, if desired.

SAUSAGE BALLS
Steps:
- Mix together sausage, cheese, milk and egg in a large bowl. Add buttermilk pancake and waffle mix with onion soup mix and ground red pepper. Blend well. Pinch off bits of dough and shape into 1- inch balls. Place on lightly greased baking sheets, spacing 1 1/2 inches apart, and sprinkle lightly with paprika. Bake 10 to 15 minutes at 375 degrees until deep golden brown, turning the balls over at halftime. Remove from baking sheets and serve.

- Heat oven to 400 degrees. Combine ingredients in a bowl and mix with your hands until there are no dry crumbs. Form into balls about one inch in diameter and place on a baking sheet. If you have the time, the sausage balls hold their shape better if refrigerated overnight before baking. (They also freeze extremely well. Bake them straight out of the freezer, adding a few more minutes to the baking time.)
- Bake until the balls are golden brown, about 8 to 10 minutes. Serve immediately.

PARTY SAUSAGE BALLS
This is a sausage ball recipe that we make every year for the holidays. My kids have a blast making the sausage balls and then watching them "boil". They are different than any I have ever tasted before. They have a candied sweet taste, but, with the sausage they have a definite zip. Hope you enjoy.

Steps:
- In a large saucepan place the apple jelly and mustard. Heat through until the apple jelly is liquid and stir to mix.
- Mix both sausages together and shape into bite-sized balls.
- Drop carefully into the jelly/mustard mixture.
- Bring to a boil and cook for 30-35 minutes, stirring frequently.
- Test a sausage ball by splitting in two to see if done.
- When finished the sausage balls will have a glaze.
- Remove from the sauce to a plate and serve with toothpicks.
- If you like you may make additional sauce for dipping.
