NEELY'S SMOKED SAUSAGE AND PEPPER SANDWICHES
I copied this from foodnetwork.com because I wanted to know the nutritional information. I haven't tried it yet as it's cooking now, but it smells great!

- Preheat the oven to 350 degrees F.
- Heat the olive oil in a large cast iron skillet or Dutch oven over medium heat. Add the sausages and brown on all sides, about 7 to 8 minutes. Remove from skillet and reserve.
- Add onions and peppers to the skillet and saute until tender and golden brown, about 6 minutes. Add the garlic and saute until fragrant. Stir in the tomato paste, beer, and BBQ sauce. Cook for a few minutes, then add the sausages back to the pan. Reduce the heat and simmer until the sauce is nice and thick, about 10 minutes.
- Slice the bread open, put on sheet tray, and toast in the oven while the sausage is simmering. Remove the bread from the oven and fill with the sausages and peppers.
- Transfer to serving dishes and serve.
GRILLED SAUSAGE PATTIES WITH PEPPERS AND ONIONS

- Preheat the grill to 350 degrees F.
- In a large bowl mix together the pork and all of the spices. Mix well until evenly distributed. Shape the mixture into 5 equal patties. Grill the patties on each side until cooked to desired doneness, about 4 minutes on each side.
- In a large bowl, add olive oil, peppers, onions, salt and pepper, and toss together. Coat the mozzarella in the oil mixture, and transfer the slices to a large plate.
- Using a grate on top of the grill, arrange the onions and sliced peppers. Close the grill and allow to cook for 1 to 2 minutes on each side.
- Put the sliced peppers, onions and mozzarella on top of each meat patty. Close the grill and cook until the cheese melts, about 1 minute.
- Tuck a sausage patty into each roll and arrange on a serving platter.
- Cook's Note: After assembling each sandwich, gently squeeze the patty together so the bread absorbs some of the juice.
SAUSAGE, PEPPER AND ONION HOAGIES

- Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
- Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.
- Drain sausages and return pan to stove, raising heat back to medium high. Add a drizzle of oil to the skillet, brown and crisp the casings. Remove sausages, slice into 2 inch pieces on an angle and set pieces back into the pan to sear.
- Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
- Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.
GRILLED SMOKED SAUSAGE AND PEPPER SANDWICH
PAT I can eat grilled sausage all by itself: there is something about the mix of pork and spices that just makes my belly happy. Now, I can also eat grilled peppers and onions all by themselves-or as a veggie side dish. Combine the two, however, and it's "Look out!" (I like to add spicy Creole mustard for a little extra kick.)

- Prepare the grill to medium heat.
- Toss the bell-pepper and onion slices with the olive oil, and season with salt and pepper. Grill the vegetables until tender and lightly charred, turning occasionally, for about 10 to 12 minutes. Brush with barbecue sauce for the last few minutes of grilling. Grill the sausages for 7 to 10 minutes, turning frequently, also brushing with barbecue sauce during the last few minutes of grilling.

- Prepare a grill for medium-high heat.
- Mix the balsamic vinegar, garlic, 1/2 teaspoon Italian seasoning, 1/2 teaspoon salt and a few grinds of black pepper in a large bowl. Whisking constantly, slowly drizzle in 2 tablespoons olive oil until emulsified. Add the red pepper, green pepper, serrano pepper, onion, 1/2 teaspoon salt and a few grinds of black pepper and toss until well combined.
- Place the basket on a baking sheet and transfer the peppers and onions to the center, letting any extra marinade drip off. Place 3 links of sausage on either side of the veggies. Close and secure the basket.
- Place the grill basket on the grill and cook, flipping once, until the vegetables and sausages start to brown and caramelize and an instant read thermometer inserted into a sausage measures 160 degrees F, 10 to 12 minutes.
- Meanwhile, mix the remaining 3 tablespoons oil, remaining 1 teaspoon Italian seasoning, 1/4 teaspoon salt and a few grinds of black pepper in a small bowl. Open the hoagie rolls and brush the insides with the herb oil. Grill until toasted, about 1 minute.
- Remove to a platter and place 2 overlapping slices provolone on each roll (do not allow cheese to hang over the sides). Return the rolls to the grill, cover, and cook until the cheese is melted, about 1 minute. Remove to a platter.
- Remove the peppers and onions from the basket and slice thinly. Cut each link of sausage in half on a deep bias and place in a hoagie roll. Divide the peppers and onions among the rolls and spoon 2 tablespoons warm marinara on top. Serve the hoagies with the remaining marinara on the side for dipping.

- In a large pan over over low-medium heat add a drizzle of oil. Add in your sausages and fry for 15-20mins, turning some-what frequently. A lower heat will render down the fat and make the skin nice and crispy, whilst making sure the meat cooks properly. Remove sausages, keep in the fat and raise heat slightly to medium.
- Add in peppers & onions and fry until they begin to soften/brown. Add in garlic and fry for another minute or so, then stir in tomato paste and fry for another 2mins. Pour in stock and deglaze the pan with your wooden spoon.
- Add tomatoes, red wine vinegar, basil/oregano, chilli flakes and sugar, salt & pepper to taste. Give it all a good stir. Slice your sausages into chunks and add them to the sauce, then lower heat slightly and simmer for 15-20mins, or until the sauce has completely thickened. This is not only important to reduce the liquid, but also to marry the flavours together.
- Slice your subs and spread with butter. Add in sausage and peppers then top with a sprinkling of parmesan and fresh parsley (optional). Enjoy!
