FLUFFY BOILED ICING
This recipe is quite old, and belonged to my mother.

Steps:
- Combine sugar, water, corn syrup, and salt in a saucepan; stir until well blended. Boil slowly without stirring until mixture will spin a long thread when a little is dropped from a spoon (hold the spoon high above saucepan), or reaches 238 - 242 degrees F (114 - 117 degrees C).
- In a large bowl, beat egg whites with a mixer until they are stiff, but still moist. Pour hot syrup slowly over egg whites while beating. Continue until mixture is very fluffy, and will hold its shape. Add vanilla, and beat until blended. If icing does not seem stiff enough, beat in 2 or 3 tablespoons confectioners sugar 1 tablespoon at a time until stiff enough to hold its shape. Spread on cake.

FLUFFY BOILED ICING

Steps:
- In a heavy saucepan combine sugar, water and cream of tartar. Slowly bring mixture to a boil, stirring sides of the saucepan with a brush dipped in water to remove any sugar crystals. Cover and boil for about 3 minutes or until a candy thermometer registers 245 degrees.
- Beat egg whites with pinch of salt until glossy and peaked. Slowly pour in syrup as you continue to beat the whites. Beat until cool and frosting is soft and fluffy. Fold in vanilla.
PATTI'S BOILED FROSTING
This is great with Aunt Helen's Chocolate Cake. The recipe calls for a cup of chocolate chips but I always throw the whole bag in! The recipe calls for chocolate chips but the peanut butter chips on that chocolate cake is divine!!! I have also used chocolate chips and white chocolate chips too, up to you. But if you like...

Steps:
- 1. In a small saucepan combine the butter, milk and sugar. Let it cook to a full rolling boil. Once you have it boiling be sure to stir it constantly and cook for a full minute and a half. After it has cooked at a full rolling boil for a minute and a half remove from heat.
- 2. Quickly add in the vanilla and the chips. Stir briskly until smooth (work fast this starts setting up fast)
- 3. Pour over your cooled cake while this frosting is still warm. Do not let the frosting stand or cool before putting it on the cake. This frosting will begin to set up very quickly.
- 4. Let the frosting set up on the cake. Enjoy!!!
PEANUT BUTTER FROSTING
If you like peanut butter you'll love this frosting, great on chocolate cakes but for a real peanut butter experience try it on a peanut butter cake. If you don't have cream, you may substitute milk.

- In a large bowl, beat butter and peanut butter until light and fluffy. Slowly beat in 1/2 of the confectioner's sugar. Mix in 1/4 cup of the cream. Beat in the remaining confectioners' sugar. If necessary, add a little more cream or milk until the frosting reaches a good spreading consistency. Makes enough to frost one 2 layer 9 inch cake or one 9x13 inch cake.

- In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour and baking powder; gradually add to creamed mixture and mix well. Stir in oats and peanuts. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool. , For frosting, in a bowl, beat peanut butter, confectioners' sugar and 1/3 cup milk; add additional milk if necessary. Frost cookies.

- 1. Position a rack in the center of the oven and preheat to 350°F. Butter the insides of two 9-inch round cake pans. Line the bottoms with waxed paper rounds. Dust the pan sides with flour and tap out the excess flour.
- 2. In a bowl, sift the cake flour, baking soda and salt together. In a separate bowl, beat the butter and granulated sugar together with an electric mixer set on high speed, occasionally scraping down the sides of the bowl with a rubber spatula, until the mixture is pale and gritty (it won't get fluffy), about 3 minutes. One at a time, beat in the eggs, beating well after each addition, then add the vanilla. Reduce the mixer speed to low. In thirds, add the flour mixture, alternating with two equal additions of the buttermilk, scraping down the sides of the bowl with a rubber spatula as needed, and mix just until smooth.
- 3. Pour half of the batter into a medium bowl. Sift the cocoa powder into the batter (sifting keeps it from clumping) and stir it in. Tint this batter bright red with the food coloring. (The amount depends on your desired shade and the kind of coloring used. You will probably use only 2 drops of paste, slightly more gel, or 1 to 2 tablespoons liquid.)
