JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA
This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

Steps:
- To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
- Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
- Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
- To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
- To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

PATTI'S PIZZA
I just love making my own pizza. I was using Boboli crust initially, but then I discovered Tiseo's frozen pizza dough, and found it to be superior, and less costly. I will sometimes use the Pillsbury pizza dough if the store doesn't have the Tiseo's, but for best results, I like to use Tiseo's. My son Marshall once called my...

Steps:
- 1. Follow directions for thawing pizza dough. I usually do this overnight. I use a brand called Tiseo's. It's really good, if you can find it.
- 2. Brown Italian sausage until no longer pink. Placed on paper towel-lined plate
- 3. Take pizza dough out of fridge. Place on a floured board. Roll out to a 12" circle.
- 4. Spray pizza pan with cooking spray. Dust with cornmeal. Place dough on pizza pan.
- 5. Cover dough with 1/2 jar pizza sauce, then Italian sausage, then mozzarella. Top with pepperoni and mushrooms. If you'd like, add any other toppings you wish.
- 6. Bake at 450 for 15 minutes. Serves 4. (You can cut it into 8 slices. I figure 2 per person is a serving)
PATSY'S PIZZA
I love thin crust pizza so I like to make it myself because even when I request thin pizza at restaurants it's not quite what I want. I used LaWanda's 30 minute pizza for the crust.Made this pizza for lunch today and it was awesome! The crust came out thin and crispy, just like I love it! You can top it with anything but this is one of my favorites toppings and it was what I had on hand without having to go to the store today, I love that! Pesto made from basil in the garden, tomatoes from my garden,so good!!!

- To make the marinade, toast the chile on a small skillet over medium heat for less than a minute per side, until toasted but not burnt. In a blender or food processor, puree the chile with the garlic, Worcestershire sauce, Maggi sauce and lime juice. Divide marinade, reserving 1/4 cup for the onions and the rest for the steak.
- Place the steak in a zip-lock bag or shallow dish and pour all but 1/4 cup marinade over it to coat. Cover (if in a dish) and refrigerate for at least 2 hours and up to overnight, turning the meat once.
- Remove the steak from the marinade. Place in an oven-proof dish and broil for 3 minutes per side. Alternatively, you can grill it for the same amount of time over medium-high heat. You want to cook the meat to somewhere between rare and medium rare. Set aside to rest for 5 to 10 minutes, then slice and cut into 1 to 2-inch pieces, across the grain.
