Steps:

  • In a large bowl, combine 1/3 cup pizza sauce, bread crumbs, pepper, onion, egg whites and garlic. Add beef; mix lightly but thoroughly. Shape into 6 oval patties., In a large nonstick skillet, cook patties over medium heat 4-5 minutes on each side or until a thermometer reads 160°., Meanwhile, place bread on an ungreased baking sheet. Brush tops with oil; sprinkle with Italian seasoning. Broil 3-4 in. from heat 1-2 minutes or until golden brown., Place remaining pizza sauce in a microwave-safe bowl. Microwave, covered, on high for 10-20 seconds or until heated through. Place patties on toast; top with sauce and cheese. Freeze option: Place patties on waxed paper-lined baking sheet; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. Freeze remaining pizza sauce in an airtight container. To use, cook frozen patties and pizza sauce as directed, increasing time as necessary for a thermometer to read 160° for patties and for sauce to be heated through.

We are big fans of pizza burgers that some greasy spoons serve, but it is so hard to find a good one so I decided to come up with my own. Here is a real simple recipe that puts smiles on the faces of my family.

Homemade Pizza Burgers image

Steps:

  • Combine beef, tomato paste, salt, sugar, garlic powder, Italian seasoning, pepper, and oregano in a large bowl. Mix thoroughly. Cover and refrigerate to let flavors marry, about 4 hours.
  • Form beef mixture into 8 thin patties. Place 1 slice of mozzarella cheese on each of 4 patties; leave at least a 1/2-inch border, breaking up the cheese as needed. Place remaining patties on top and pinch edges to seal in the cheese.
  • Heat a skillet over medium-low heat. Fry burgers until browned and centers reach 165 degrees F (74 degrees C), 6 to 7 minutes per side. Serve on buns.

JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA

This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

Jim Lahey's No-Knead Pizza Margherita image

Steps:

  • To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
  • Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
  • Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
  • To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
  • To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

Steps:

  • 1. Follow directions for thawing pizza dough. I usually do this overnight. I use a brand called Tiseo's. It's really good, if you can find it.
  • 2. Brown Italian sausage until no longer pink. Placed on paper towel-lined plate
  • 3. Take pizza dough out of fridge. Place on a floured board. Roll out to a 12" circle.
  • 4. Spray pizza pan with cooking spray. Dust with cornmeal. Place dough on pizza pan.
  • 5. Cover dough with 1/2 jar pizza sauce, then Italian sausage, then mozzarella. Top with pepperoni and mushrooms. If you'd like, add any other toppings you wish.
  • 6. Bake at 450 for 15 minutes. Serves 4. (You can cut it into 8 slices. I figure 2 per person is a serving)

I love thin crust pizza so I like to make it myself because even when I request thin pizza at restaurants it's not quite what I want. I used LaWanda's 30 minute pizza for the crust.Made this pizza for lunch today and it was awesome! The crust came out thin and crispy,just like I love it! You can top it with anything but this is one of my favorites toppings and it was what I had on hand without having to go to the store today, I love that!   • Preheat oven to 425 deg. Combine 1 c flour,yeast,sugar and salt in a large bowl.Add water and oil. Mix until well blended;about 1 minute. Add gradually,enough remaining flour until soft dough is formed. Dough will be sticky. Knead on a floured surface adding additional flour if needed,until smooth and elastic about 4 minutes. With floured hands ,pat dough out to fill greased pizza pan,or roll dough to a 12-inch circle and transfer to a greased pizza pan. Spread with pesto,sprinkle with Parmesan cheese,oregano,salt and pepper.top with tomatoes and additional cheese. Bake on bottom oven rack for 12 to 15 minutes until cheese is bubbly and crust is browned.

  • To make the marinade, toast the chile on a small skillet over medium heat for less than a minute per side, until toasted but not burnt. In a blender or food processor, puree the chile with the garlic, Worcestershire sauce, Maggi sauce and lime juice. Divide marinade, reserving 1/4 cup for the onions and the rest for the steak.
  • Place the steak in a zip-lock bag or shallow dish and pour all but 1/4 cup marinade over it to coat. Cover (if in a dish) and refrigerate for at least 2 hours and up to overnight, turning the meat once.
  • Remove the steak from the marinade. Place in an oven-proof dish and broil for 3 minutes per side. Alternatively, you can grill it for the same amount of time over medium-high heat. You want to cook the meat to somewhere between rare and medium rare. Set aside to rest for 5 to 10 minutes, then slice and cut into 1 to 2-inch pieces, across the grain.

  • Heat oven to 400°F. In 2-quart saucepan, heat 2 tablespoons oil over medium-high heat. Add onion and garlic; cook about 4 minutes, stirring constantly, until onion is tender. Stir in tomatoes, basil, bay leaf, salt and pepper. Reduce heat to medium-low. Simmer uncovered 20 minutes, stirring occasionally. Stir in reserved tomato juice. (Sauce should be thick.) Remove and discard bay leaf.
  • Meanwhile, spray 12-inch skillet with Crisco® Original No-Stick Cooking Spray. Spread sausage over bottom of skillet into large patty. Cook over medium-high heat 5 to 8 minutes on each side, turning once, until no longer pink in center. (If necessary, cut patty in half or into quarters to turn.)
  • Coat bottom and side of 12-inch cast-iron skillet or other ovenproof skillet with 1 tablespoon oil; sprinkle with cornmeal. Unroll pizza crust dough in skillet; press on bottom and at least halfway up side. Brush dough with remaining 1 tablespoon oil; prick bottom and sides of dough with fork. Sprinkle mozzarella cheese over dough. Top with sausage patty, keeping patty in one piece.
  • Bake 15 to 18 minutes or until crust is light golden brown. Spread sauce over sausage. Bake 5 to 10 minutes longer or until crust is golden brown. Sprinkle with Parmesan cheese. Let stand 10 minutes before cutting.
