PEAR-RASPBERRY COBBLER

Steps:
- Preheat oven to 350°. Peel, halve, core, and slice pears. Combine sugar, flour, spices, and sliced pears. Add lemon juice and raspberries. Mix and spoon into 2-quart dish. Topping: Combine flour, 1 tablespoon sugar, baking powder, soda, and salt. Cut butter into small pieces and blend with pastry cutter into flour mixture until coarse meal texture; then add buttermilk. Stir, roll between 2 pieces waxed paper sprayed with Pam. Peel off waxed paper and place over fruit and sprinkle with remaining teaspoon sugar. Bake for 35-45 minutes, till lightly browned.

PAWLEY'S ISLAND SLAW
There must be hundreds of recipes for slaw on the 'zaar, but this one appeals to me as it does not contain any carrots, which here is Denmark are even found in Tartar Sauce(!!), and can be made days ahead and is even better as it ages. Recipe is from cookbook issued by Episcopal Church at Pawley's Island, SC in 1955.

- In a large casserole dish with cover make layers of the onions and cabbage and sprinkle each layer with the sugar. Set aside for the moment.
- Mix and bring to a boil in a large saucepan all of the dressing ingredients. Pour the hot dressing over the onions and cabbage layers, cover, and place in the refrigerator for no less that 24 hours. The slaw is even better if it ages longer.

FRESH SOUTHERN PEACH COBBLER
I've been experimenting with cobbler for some time and this recipe is the final result. Loved by all. Use fresh Georgia peaches, of course!

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

- Sift flour, salt, and baking powder. Mix with 1 cup sugar; slowly stir in milk to make batter. Melt butter in 8x8x2-inch pan. Pour batter over melted butter. Do not stir. Mix peaches with remaining 1 cup sugar and carefully spoon over batter. Bake 1 hour at 350°. Serve hot or cold, with cream if desired.

- Cream butter and sugar; add milk and dry ingredients. Pour batter into a 2-quart greased casserole. Place fruit, sugar, and juice over batter in that order. Bake at 375° for 45 minutes or until batter rises to top, browns, and cobbler is bubbly. Note: For filling, use enough fresh fruit of any kind, sugared, to cover bottom of 2-quart casserole, or use canned cherries, blackberries, etc. If using canned fruit, use 1/4 cup sugar and 1 cup of juice.
