BABY NECTARINE PEACH PIES

I love nectarines and was in search of good recipe for nectarines. I found a recipe for raspberry nectarine pie but that did not fancy my taste. Peach and Nectarine was my choice. As you can see I do not do lattice well. LOL

Baby Nectarine Peach Pies image

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a large bowl, combine the peaches and nectarines, 1/2 cup of the sugar, the lemon juice, and lemon zest. Set aside for 10 minutes to juice. Combine the remaining 2 tablespoons sugar and the cornstarch in a small bowl, then stir the mixture into the fruit. Stir in the almond extract.
  • 3. To assemble the pies, roll out your favorite pie crust. Cut circles big enough to fill a muffin well. You could use a lid or a biscuit cutter. Place the circles into the muffin tin as if you were filling a pie plate. Fill with pie filling, almost to the top. With remaining dough pieces, cut strips for these, but you could take a small cookie cutter and cut out shapes and put on top.
  • 4. Sprinkle some sugar on the tops and bake for 20-25 minutes. Let cool and serve.

Steps:

  • In a large bowl, combine sugars; add peaches and toss gently. Cover and let stand for 1 hour. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate or iron skillet.Trim even with rim. Refrigerate while preparing filling. , Preheat oven to 400°. Drain peaches, reserving juice. In a small saucepan, combine cornstarch, nutmeg, cinnamon and salt; gradually stir in reserved juice. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in lemon juice and butter. Gently fold in peaches. Pour into crust. , Roll remaining dough to a 1/8-in.-thick circle; cut into 1-1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom crust; flute edge. Cover edge loosely with foil. Bake 40 minutes; remove foil. Bake until crust is golden brown and filling is bubbly, 10-20 minutes longer. Cool on a wire rack. If desired, serve with vanilla ice cream.

Steps:

  • Roll out bottom crust.
  • Combine peaches, nectarines, pumpkin pie spice,1 cup sugar,cornstarch, and ginger.
  • Spoon peach mixture into crust.
  • Roll out top crust and fit onto filled bottom crust.
  • Cut steam vents into top crust.
  • Brush top crust with beaten egg and sprinkle with 1 Tbsp sugar.
  • Bake at 400 degrees for 15 minutes.
  • Reduce oven temperature to 375 and bake 1 hour,20 minutes or until crust is golden and filling is bubbly.
  • Cool on wire rack.

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Place a large pot of water over high heat, and bring to a boil.
  • Combine sugar, flour, cinnamon, heavy cream and almond extract. Set aside.
  • Place the nectarines in boiling water for 30 to 45 seconds. Immediately place nectarines under cold running water and remove skins. Cut nectarines in half and remove pits. Place halves in the pie shell with the cut side down. Pour the cream mixture around the nectarines.
  • Bake at 400 degrees F (205 degrees C) for 35 to 40 minutes. Good served warm or cold.

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch baking pan.

Steps:

  • Preheat oven to 425°F.
  • On a well-floured surface, roll the prepared pastry dough out to an even circle about 12-inches in diameter. Carefully fold the dough in half and transfer it to a 9-inch pie pan. Unfold the dough and press it gently on to the bottom and sides of the pan - there should be some dough overhanging the edes. Leaving about 1/2-inch overhang, cut off any dough in excess of that. tuck the overhang under and pinch the edges decoratively to make a fluted edge - or simply press the edge with a fork if you prefer.
  • In a large bowl, beat the eggs slightly, then whisk in the sugar, sour cream, flour and cinnamon, Add the prepared peaches and nectarines (There should be about 5 cups prepared fruit) and stir to combine.   • Preheat the oven to 350 degrees. Grind the whole crackers in food processor until they turn into fine crumbs and pour in melted butter through feed tube; process until moistened. (Or combine cracker crumbs and butter in a medium-size bowl and mix until moistened.)
