PEACH SURPRISE PIE
A peaches and cream pie served with a raspberry sauce. For special occasions, garnish with fresh mint leaves. Quick and easy to make and very yummy as well!!

Steps:
- Combine softened cream cheese, sugar, and vanilla extract in a medium mixing bowl. Mix until smooth. Spread onto bottom of baked pie shell. Chill several hours or overnight.
- Before serving, top cream cheese layer with drained peach slices. Mix raspberry preserves with lemon juice until well combined. Spoon over peaches. Garnish with mint sprigs.

PEACHY ORANGE CREAM COCKTAIL
Put peach and orange slices in glass topped with vanilla simple syrup and vodka - a wonderful drink that's ready in just 10 minutes.

Steps:
- Split vanilla bean lengthwise into halves. Scrape out seeds with tip of small knife. Set aside.
- To make Vanilla Simple Syrup, in 1-quart saucepan, mix sugar, water, vanilla seeds and bean. Heat to boiling over medium-high heat, stirring until sugar is dissolved. Remove from heat; set aside 1 hour to cool. Discard vanilla bean. Pour syrup into glass jar. Cover jar; refrigerate until needed. Makes 1 1/4 cups.
- To prepare cocktail, mash peach and orange slices with spoon in bottom of glass. Top with 1 1/2 teaspoons of the vanilla simple syrup and the vodka; add ice and soda. If desired, garnish with additional fruit slices or mint sprig.

Peaches and yogurt that look like eggs sunny-side up! My 10 yr old saw this idea on a children's TV show and used to surprise her younger sisters; it was a big hit. It would be a great afterschool snack or quick breakfast for slumber parties.
