PEANUT BUTTER NO BAKE COOKIES
Posted in response to a request, I got this recipe from a lady at church who make them for Bible School in the 1980s. I had made chocolate no-bake cookies for YEARS but had never heard of peanut butter no bake cookies. So delicious that my choco-holic daughter likes them better than the chocolate variety! No. of servings depends on how big you make the cookies. Prep time depends on how fast you are scooping the cookies onto the wax paper covered newspaper! (You get better w/ practice! :D )

Steps:
- In lg saucepan, mix sugar, margarine, and milk; bring to a full, rolling boil over med heat. (full, rolling boil = large bubbles rising to surface that can't be stirred down).
- Boil for one minute, stirring constantly.
- Remove from heat and stir in peanut butter and vanilla, stirring until peanut butter is melted; stir in oats.
- Working quickly, drop by spoonfuls onto waxed paper . Let cool completely.

- In a saucepan over medium heat, combine sugar, butter and milk. Bring to a rapid boil and boil for one full minute. Remove from heat and stir in the vanilla and peanut butter. Mix in the oats, stirring until the mixture begins to cool. Transfer to a large bowl if it does not fit into the pan well. Drop batter by teaspoonfuls onto waxed paper. Let cool until set.

- Line a baking sheet with wax paper or parchment.
- Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute. Remove from the heat. Add the oats, peanut butter, vanilla and salt, and stir to combine.
- Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes. Refrigerate in an airtight container for up to 3 days.

- Line two large jellyroll pans with parchment paper or waxed paper. Set aside. In a large mixing bowl, add the dry oats and peanuts, if using. Set aside. In a 2-quart non-stick saucepan over medium/medium-high heat, bring the butter, sugar, brown sugar, salt, and milk to a rapid boil. Once it starts boiling good, cook for exactly 2 minutes, whisking constantly. Remove from heat and stir in vanilla and peanut butter until melted. Pour hot mixture over the oats and peanuts and stir until the mixture loses its gloss as it begins to cool. (This may take 5 to 10 minutes. it will start to look dull as it stiffens.) Drop mixture by heaping teaspoonfuls onto prepared pans. (I scooped it up with a teaspoon and used the back of another teaspoon to push it out.) Makes about 60 pieces. Let cool until completely hardened. Store in an airtight container at room temperature.
