Pecan Surprise Pie Recipes
RITZ CRACKER PECAN PIE
A different version of a pecan pie that is easy and delicious. The recipe comes from the Louisiana Fur & Wildlife Cookbook.

Steps:
- Beat egg whites until foamy, add sugar and vanilla, beat until stiff.
- Sprinkle baking powder over crackers, mix well.
- Add crushed crackers and pecans to egg white mixture.
- Add vanilla, mix well.
- Batter will be stiff.
- Spread onto well greased 9" x 9"square pan or pyrex dish.
- Bake at 350 degrees for 30 minutes, little less for glass dish.
- Serve warm with vanilla ice cream, if desired.

This is the 1971 winner of the Pillsbury Bake-Off. It was created by Pearl Hall of Washington. It's described as "delicious as pecan pie" only easier to make and much more portable to eat in bar form.

Steps:
- Heat oven to 350.
- Grease 13 x 9 inch pan.
- Reserve 2/3 cup of the dry cake mix for filling.
- In a large bowl, combine remaining dry cake mix, margarine and 1 egg at low speed until well blended.
- Press in bottom of greased pan.
- Bake at 350 for 15-20 minutes or until light golden brown.
- In large bowl, combine reserved 2/3 cup dry cake mix, brown sugar, corn syrup, vanilla and 3 eggs at low speed until moistened.
- Beat 1 minute at medium speed or until well blended.
- Pour filling mixture over warm base; sprinkle with pecans.
- Bake an additional 30-35 minutes or until filling is set.
- Cool completely.
- Cut into 36 bars.
- Store in refrigerator.

- Heat oven to 375°F. In small bowl with electric mixer, beat cream cheese, 1/3 cup sugar, the salt, 1 teaspoon vanilla and 1 of the eggs on low speed until smooth and well blended; set aside.
- In another small bowl with electric mixer, beat remaining 3 eggs, 1/4 cup sugar, the corn syrup and 1 teaspoon vanilla on medium speed until well blended. Spread cream cheese mixture in bottom of crust-lined pan. Sprinkle with pecans. Gently pour corn syrup mixture over pecans.
- Bake 35 to 45 minutes or until center is set. After 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Cool completely, about 2 hours. Store in refrigerator.
