Steps:
- Cut sausages into 1" pieces.
- Cook uncovered in frying pan (with a lid for later) until well browned. Drain off all fat.
- Add uncooked noodles, onion and celery.
- Sprinkle with the next 5 ingredients.
- Combine tomatoes, water and cheese. Pour over mixture in pan. Cover and simmer over low heat, stirring occasionally until noodles are tender - about 30 minutes.
- Add boiling water during cooking if needed.
- Serve very hot, sprinkled with extra cheese.

We've all had that day - food in the house is running short. You can't get to the grocery store for whatever reason. You need something hearty for dinner. This was my solution on one of those days.

Steps:
- Thaw chicken breasts (if frozen).
- In a medium pot, combine water, creamy tomato soup, bullion cubes, and 1 tsp of the olive oil. Bring to a boil.
- While waiting for the pot to boil, heat a medium saucepan with the remaining oil over medium heat.
- Dice chicken breasts into 1/2 inch cubes.
- Once water/soup mixture is boiling, add rice and reduce heat to low, so that the rice mixture barely simmers.
- Add the rest of the ingredients (except the chicken, minced garlic, salt and black pepper) to the rice and stir thoroughly.
- Add chicken and minced garlic to saucepan and cook thoroughly. Near the end of the cooking, add salt and black pepper.
- Once the chicken has cooked thoroughly, drain off most of the excess oil, but be careful to keep the minced garlic in the pan.
- Add chicken to rice mixture.
- Simmer over low heat for about 10 minutes (cooking time may vary, depending on the stove) until the rice is tender.
- Fluff rice and serve hot.

SUNNY SIDE UP SPECIAL
I make this for Dave at least once a month and he loves it. So simple and so good. Cook time does not include cooking the bacon.

Steps:
- Spray a non-stick skillet with Pam.
- Pre-heat pan over medium heat until beads of water sizzles.
- Add eggs, being careful not to break the yolk (see note below), cover and cook over medium heat for 3-5 minutes or to your liking (we like the yolk runny).
- Toast bread and immediately add the slice of cheese, add the eggs, salt and pepper and the crumbled bacon.
- Enjoy.
- NOTE:At times I will break the eggs into a bowl and then pour them into the skillet. Haven't had a yolk break yet.

- Note: You will need a large deep sauce pan. Recipe makes ample amount of food.
- Prepare rice according to package instructions. Long-grain rice will take about 20 minutes all together including boil time for water.
- While rice is cooking, brown turkey and add chili seasoning, salt, ground cumin, and chopped onions. Simmer for 10 minutes Simmer w/o lid to allow any water to simmer away.
- Drain cans of corn, beans, and tomatoes. Add corn, beans, and tomatoes to ground turkey. Simmer for another 10 minutes Simmer w/o lid to allow any water to simmer away.
- Serve on bed of rice.
- Note: Ground turkey can be substituted with ground beef, or venison (deer) even.

ORIGINAL JOE'S SPECIAL
There are many different versions of this, and we love to eat this with tabasco sauce and sometime along with ketchup drizzled over it. The kids like this with ketchup (of course). I've always eyeballed the seasonings, and relied on the hot sauce, so do adjust to your taste (add more seasonings if you don't use hot sauce or ketchup)!

- Heat skillet, sautee chopped onions until softened, add garlic.
- Meanwhile, in another skillet, heat and add olive oil, add mushrooms and sautee a few minutes. Season with some salt and pepper, add red wine. Simmer with lid slightly open.
- Add ground meat to the onions, season with salt, pepper, Italian Seasonings, garlic powder, and brown the meat.
- When meat is almost cooked through, add spinach and the entire skillet of mushrooms and juices, add worchestershire. Cook through. Turn heat to low and add eggs, stir and cook until set. Adjust seasonings to taste.
