DRIP BEEF SANDWICHES

Steps:
- Sprinkle the chuck roast with salt and pepper.
- Melt 2 tablespoons of the butter and the canola oil in a heavy pot over high heat. Sear both sides of the chuck roast until very browned, about 5 minutes in all. Pour in the beef broth and 1 cup water. Add the rosemary, and then pour in the pepperoncini with their juices. Now cover the pot and simmer until the meat is tender and falling apart, 4 to 5 hours.
- Meanwhile, heat a skillet over medium heat and add the remaining 1 tablespoon butter. Add the onions and saute until light golden brown. Set aside.
- Remove the roast from the pot and shred the meat completely using two forks. Return the meat to the cooking liquid and keep warm.
- To serve, slice wedges out of the tops of the deli rolls. Heap a generous portion of meat on each roll, and then spoon some of the cooking liquid over the meat. Top with a few peppers from the pot and plenty of caramelized onions. Top the sandwiches with the wedges of roll and serve to a roomful of ravenous guests. You¿ll win friends and influence people.

- In a large skillet, saute the green peppers, onion and half of the garlic in oil until vegetables are tender. Add steak, salt if desired and pepper; heat through. , Blend butter and remaining garlic; spread over cut side of rolls. Place steak mixture on bottom halves; replace roll tops.

- Sprinkle steaks with salt and pepper. Grill, covered, over medium heat or broil 3-4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes before slicing., Meanwhile, in a large skillet, saute sliced onion, mushrooms and poblano pepper in 2 tablespoons butter until tender. Remove from the heat; stir in sliced steak., In a small saucepan, saute chopped onion in remaining butter until tender. Add garlic; cook 1 minute longer. BEEF, PEPPERS AND ONIONS SANDWICH
I have gotten two steaks that were on sale. But I wanted to make a meal for four so I came up with this solution. Freeze the steak until firm for easier slicing. Really good

- 1. Trim fat from beef steak if any and set aside. Slice beef steak into thin slices. In a large bowl mix together all the marinade ingrediant. Add meat, cover and refrigerate for 1-2 hour.
- 2. Meanwhile in a small sauce pan over med heat add the beef fat and cook until the fat has rendered. If you did not have fat left over use the bacon. Add garlic, pepper flakes, and bay leaf cook a minut more. Add the beef broth and onion powder. Lower heat and simmer until half is gone. Strain and set aside.
- 3. In a large skillet, or pan, heat olive oil over med-high heat.Add the peppers and onions, salt and pepper and cook until just about soft. Remove the beef from the marinade. Discard marinade. Add beef to the pan, and cook until the beef is browned. Remove from heat and strain the mixture. Return to pan, add the sandwich beef juice and simmer for 2 minutes.
- 4. Turn on broiler. Slice rolls and open them face up Place on a baking sheet line with foil,. Top each roll with the beef steak mixture, then your favorite cheese. Place it under the broiler until cheese is melted. Add a little juice to the bare side of the roll and top with the pickled peppers. Serve with fries or chips.

My mom got this recipe years ago from a restaurant in Sacramento. The flavor of the olive oil really stands out, so use the good stuff.

- Preheat the broiler or toaster oven.
- Heat the 3 tablespoons olive oil in a large skillet over medium-high heat. Add beef strips to brown.
- Add onion and pepper to beef. Saute until softened and brown around the edges, about 10 minutes.
- Add garlic. Cook for one minute more.
- Meanwhile, brush hoagie rolls with remaining olive oil and toast under the broiler.
- Pile meat mixture on rolls, and top with chopped tomatoes. Yum!

- Lay sliced bread on bread board.
- Paint tops of bread slices generously with melted butter.
- Flip bread slices over.
- Spread mayonnaise generously on each slice of bread.
- Assemble two sliced bread pieces with roast beef, cheese and 1/2 teaspoon diced green chilies.
- Sprinkle with salt. Top sandwiches with other two slices of bread, mayo side down, butter side up.
- Grill sandwiches on medium high heat griddle, with lots of butter on the grill beneath, until bottoms of sandwiches are golden brown and cheese begins melting.
- Carefully flip sandwiches over using two utensils and grill again until bottom bread is also golden brown and cheese is melted.
- Remove two sandwiches from griddle, slice each in half and arrange on two plates. Garnish plates.
- Serve with dill pickles, yellow mustard, prepared horseradish and lots of napkins.
- French fries, onion rings and cole slaw make wonderful additions to this meal.
THE BEST ROAST BEEF FOR SANDWICHES
The best cut of roast beef for sandwiches isn't necessarily the same as what you'd want hot from the oven. A hot roast demands plenty of marbling so that the rich fat can melt and baste the meat with its goodness. Roast beef sandwiches work better made from a leaner cut, preferably one with a mineral, earthy taste and a nice chew. A top loin roast is ideal. It's got plenty of brawny flavor, and all of the fat is on the surface, which you can easily trim off after the meat is cooked. Here, the beef is roasted low and slow to ensure rare, juicy meat. This said, if you want a more economical cut, use bottom, top or eye round here instead. Just adjust the roasting time if the cut is larger or smaller. As long as you pull the meat out of the oven when it reaches between 125 and 130 degrees, you'll get nicely rare meat. More sandwich recipes.

- In a small bowl, stir together the garlic, salt, pepper and rosemary. Spread the paste all over the meat. Cover loosely with plastic wrap and refrigerate at least 3 hours or overnight.
- When you are ready to prepare the meat, remove it from the fridge and let stand at room temperature for 30 to 60 minutes.
- Heat oven to 325 degrees. Place a wire rack in a rimmed baking sheet.
