PIMENTO CHEESE STUFFED BURGERS

Pimento Cheese Stuffed Burgers image

Steps:

  • For the pimento cheese: Add the Cheddars, cream cheese, pimentos and mayo to a bowl and mix together. Add the chives, garlic powder, cayenne, smoked paprika and salt and pepper and mix until thoroughly combined.
  • Place the cheese mixture on a sheet of plastic wrap and form into a log. Freeze for a few minutes or refrigerate up to overnight.
  • For the sauce: Mix together the mayonnaise, hot sauce, Worcestershire, paprika and 1 tablespoon reserved pimento juice in a medium bowl. Season with salt and pepper.
  • For the burgers: Preheat a grill to medium heat.
  • Mix the meats, breadcrumbs, Worcestershire, egg, salt and pepper together in a bowl with your hands until completely combined. Divide the meat into 8 portions and shape each into large thin patties. Slice four 1/2-inch slices off the pimento cheese log (reserve the rest for another use...snacking!). Place a pimento cheese slice on four of the patties and then top them with the remaining four patties, sealing the sides of the patties to enclose the cheese. (See Cook's Note.)
  • Lightly oil the grill grates. Add the patties to the hot grill and cook until they reach an internal temperature of 160 degrees F, about 4 minutes per side.
  • Spread the sauce on the buttered buns. Top each with lettuce, tomato, pickles, onions and a patty and close the burgers. Eat with lots of napkins.

8 ounces extra-sharp yellow Cheddar, shredded
4 ounces white Cheddar (preferably Vermont Cheddar), shredded
8 ounces cream cheese, softened
4 ounces diced pimentos, drained and juice reserved
3 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
A few dashes hot sauce
Dash Worcestershire
Pinch paprika
Kosher salt and freshly ground black pepper
1 pound 80/20 ground beef
1 pound ground pork
2 tablespoons plain breadcrumbs
2 tablespoons Worcestershire sauce
1 large egg, lightly beaten
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Vegetable oil, for oiling grill grates
4 hamburger buns, buttered and toasted
For serving: lettuce, sliced tomato, pickles, sliced red onion

When we decided awhile back to move south, I started reading up on Southern Cooking and absolutely fell in LOVE with Southern favorites. My husband often enjoyed the new types of recipes I tried but always asked for the same old PA Dutch favorites that were so traditional to our upbringing. BUT NOW.....he asks when the next new recipe is coming!! YAAY! Of all of the things I've tried this is the one he asks for the most :-)

Steps:

  • Sprinkle chicken evenly with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Whisk together 1/2 cup milk and egg. Dip chicken in milk mixture, and dredge in breadcrumbs.
  • Pour oil to a depth of 1/8 inch in a large skillet over medium-high heat. Cook chicken in hot oil about 10 minutes on each side or until done.
  • Transfer chicken to a baking sheet. Hold chicken with tongs, and cut a slit in 1 side of each chicken breast to form a pocket. Spoon 1/3 cup Pimiento Cheese into each pocket.
  • Bake at 350° for 2 to 3 minutes or until cheese is melted. Garnish, if desired, and serve immediately.

Pimento Cheese Stuffed Chicken Breasts image

Steps:

  • Preheat oven to 350 degrees F.
  • Mix first three ingredients and 1 t. of paprika in a small bowl.
  • Pound out chicken breasts between Saran Wrap till 1/4" thick. Put enough cream cheese mixture on each chicken breast to spread out to within 1" of the edge. Roll each chicken breast up, making sure to seal up the ends too. Secure with 2 toothpicks.
  • In a large dish, mix bread crumbs, the rest of the paprika and salt and pepper. Roll each chicken roll in crumbs.
  • Heat oil 1/4" deep in a large skillet. Brown chicken rolls till golden brown on all sides.
  • Transfer to baking sheet. Bake in preheated 350 degree oven for 15 to 20 minutes. Don't forget to remove the toothpicks before serving.

I was waiting for my daughter to finish her SAT math prep class when I came across a recipe in a magazine (it might have been Good Housekeeping). Sorely tempted to tear it out, I resisted and copied the essence of it on the carbon of a check (the only handy paper). I made a couple of changes, for health and taste, and here it is. I suppose you could save time and use prepared pimiento spread. I think my version might taste fresher and livelier.My family loved it--hope you will too.

Pimiento Cheese and Bacon Stuffed Chicken image

Steps:

  • Preheat oven to 350 degrees.
  • Combine bacon and next 6 ingredients (using 1/4 tsp of the salt). Cut a deep slip in the thickest part of the breast of each chicken. Spoon a teaspoon or so of the cheese mixture into newly created pocket. Secure the opening with a toothpick or two. Sprinkle the chicken with 1/4 teaspoon salt. Heat canola oil in cast iron skillet (or skillet with foil ready to cover the handle to make it oven proof). Pan fry the chicken for about 4 minutes each side, making adjustments as necessary for the fact that the toothpicks make portions of the meat difficult to reach the surface of skillet. Then remove skillet to heated oven, and complete cooking the chicken, approximately 12 minutes.
