My Mom made this for us one Christmas and we all loved it despite the unlikely pairings of ingredients. Great with ham.

Steps:

1. Combine pineapple and cheese.
2. Mix flour and sugar in a small bowl and then stir into pineapple mixture.
3. Turn into buttered 1-1/2 quart casserole dish.
4. Combine melted butter with the Ritz crackers and sprinkle over the pineapple mixture.
5. Bake in a preheated 350 degree oven for 30 minutes.
6. Serve hot.

3 Tbsp all purpose flour
3/4 c ritz cracker, crushed

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Spread pineapple in the bottom of a 2 quart casserole dish.
In a small bowl, stir together the sugar, flour and cheese. Add to casserole dish.
Sprinkle crackers over the top of pineapple and cheese mixture. Pour melted butter over the top and bake for 30 minutes.
