CABBAGE PINEAPPLE SALAD
One salad I remember fondly was just thinly sliced cabbage with pineapple chunks and pecans. Momma made dressing with mayonnaise, vinegar and a little sugar.

- 1. Slice the cabbage thin and place in bowl
- 2. Drain juice, then scatter chunks of pineapple over cabbage
- 3. Toss in chopped pecans
- 4. Make a dressing with sour cream, mayonnaise, lemon juice, and sugar to taste
- 5. Toss with dressing just before serving

- Cook bacon until crisp over medium high heat.
- Drain, crumble and set aside.
- Combine pineapple juice, red wine vinegar and salt and pepper in a small bowl.
- Whisk in olive oil slowly.
- On a large platter, place Romaine lettuce, pinepple chunks and green onions.
- Pour dressing over and toss.
- Top with almonds, crumbled bacon and coconut and serve.
