FROG EYE SALAD
An acini di pepe (or couscous) pasta salad with coconut, pineapple, Mandarin oranges, and marshmallows.

Steps:
- In a sauce pan, combine sugar, flour, 1/2 teaspoon salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat; add lemon juice and cool to room temperature.
- Bring water to a boil, add oil, remaining salt and cook pasta until al dente. Rinse under cold water and drain.
- In a large bowl, combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled. Before serving add marshmallows and coconut. Toss and serve.

- In a small saucepan, bring broth to a boil. Stir in couscous. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork. In a large bowl, combine the couscous, pineapple, chilies, pecans, onions, oil, mint and garlic; toss to coat. Refrigerate until chilled. Serve over spinach.

- In a large saucepan, bring water, butter and garlic powder to a boil. Turn off heat and stir in couscous. Cover and let stand for 5 minutes. Fluff with a fork and let cool.
- In a large bowl, mix together couscous, ham, pineapple, onion and drained peas
- In a small bowl whisk together 1/4 cup reserved pineapple juice, lemon juice, Dijon-style mustard and vegetable oil. Pour dressing over the salad and stir to coat. Salt and pepper to taste.

SUNNY'S SIMPLE SUMMERTIME COUSCOUS SALAD

- Make the dressing: In a large bowl, whisk together the honey, orange juice, a pinch of salt, mustard, olive oil and a few grinds of black pepper. Whisk until combined, then slowly add the oil while whisking until it is all combined. Taste and season with more salt, if needed. Set aside.
- Make the salad: To the bowl of dressing, add the cooked couscous, cucumbers and sweet peppers. Toss to coat and refrigerate for at least 2 hours, tossing a few times as it chills.
- Finish and serve. Remove the salad from the refrigerator and toss again. Garnish with the orange sections, basil and mint.
ORANGE-PINEAPPLE COUSCOUS
This makes a great side dish to barbecue meats or for a picnic. Recipe is from one of my old Junior League cookbooks.

- 1. Add enough orange juice to the mandarin orange juice to make 2 1/4 cups liquid. Bring the juices and cumin to a boil in a saucepan. Remove from heat and add couscous. Cover and let stand 5 minutes. Pour into a large bowl and let cool.
- 2. Combine oil, soy sauce and lime juice. Stir into couscouls mixture. Add in mandarin oranges, cilantro, basil, green onions, ginger and pineapple. Sprinkle with pine nuts.

- Drain pineapple, reserving juice. Cut slices in half; set aside. EASY PINEAPPLE COUSCOUS
Couscous side dish that is easy to make and kid friendly. It goes great with any seafood dish and would be excellent served with Teryaki Chicken. I served with Grilled Tuna Steaks and steamed green beans. Use leftovers as a healthy mid-day snack :-)

Steps:
- Bring chicken broth (or water) to boil in medium saucepan.
- Add dry couscous to boiling liquid, stir just to coat couscous, remove from the heat and cover with lid.
- Let sit for 5 minutes.
- While couscous is setting; mix well with whisk the pineapple juice, olive oil and Spicy Brown Mustard (can use Dijon or Whole Grain), salt/pepper to taste. Set "dressing" aside.
- Remove lid from saucepan and fluff couscous with fork.
- Add pineapple tidbits, diced red pepper, "dressing" and parsley to couscous and mix well.
- Enjoy!
