- Preheat oven to 450 degrees. On a rimmed baking sheet, toss together sweet potatoes, pineapple, oil, and cayenne pepper. Season with salt. Roast until sweet potatoes and pineapple are tender and golden, 30 to 35 minutes, stirring every 10 minutes.

PINEAPPLE-JUICE-CAN HEN AND BABY POTATOES
Roast chicken is one of my I-can't-have-it-around-or-I'll-eat-the-whole-thing addictions. After the first meal, the rest of the bird sits front and center in my refrigerator, and when the urge hits, I pull off a piece here and there until the carcass is picked clean. Anyway, that's one of the reasons I am drawn to smaller birds: guinea hens, squab, poussin. They're certainly on the high end in terms of fat and calories, but at least when I'm done, I'm done. No more temptations. When I saw 3/4-pound hens at one of my favorite vendors (Eco-Friendly Farms) at the Sunday farmers' market in Washington's Dupont Circle, I had a brainstorm: Why not treat them like beer-can chicken (more colloquially known as beer-butt chicken), but with a smaller can of pineapple juice instead? I thought it was the most original thing ever, until I Googled around and saw that others had trod this ground before me, including barbecue maestro Steven Raichlen. I forged ahead, combining the pineapple with one of its natural partners-rosemary-and cooking down extra juice with lime and butter into a sweet-and-sour glaze. With roasted potatoes (babies, of course), I had a meal.

- Preheat the oven to 425°F.
- Rinse the hen under cold running water, then pat dry with paper towels. Remove the packet of giblets, if there is one, and discard or save for another use. Rub the hen with 1 teaspoon of the butter, then sprinkle generously with salt and pepper inside and out. Loosen the skin over the breasts and tuck one of the rosemary sprigs under the skin on each side.
- Shake the pineapple juice well, remove the paper exterior from the can, rinse, and dry the can. Use a can opener to completely remove the top of the can. Pour half of the pineapple juice into another container and reserve for another use. (Or drink it while you cook!)
- Spray the can's exterior with cooking oil spray. Set the can in the middle of a small, oven-proof skillet and set the hen on top of it, carefully working the can into the hen's cavity without spilling the juice. Scatter the potatoes around the hen, season them with salt and pepper, drizzle with the olive oil, and scatter the leaves from the remaining rosemary sprig around them.
- Roast the hen for 30 to 40 minutes, until it is nicely browned, the juices run clear, and an instant-read thermometer inserted into the thickest part of the thigh reads at least 165°F. Remove from the oven, use oven mitts or tongs to remove it from the pineapple juice can, and transfer the hen to a serving plate; let it rest for about 10 minutes. If the potatoes are not fork-tender, return the potatoes to the oven to continue cooking while the hen rests.
- While the hen is resting, pour the contents of the pineapple juice can into a small saucepan set over medium-high heat. Add the lime juice and remaining 1 teaspoon butter. Bring to a boil and let it bubble away until it has reduced to a syrupy glaze, about 10 minutes.
- Cut the hen in half with a sharp chef's knife or poultry shears, and scatter the roasted potatoes around it. Drizzle the hen with the pineapple-lime glaze, and eat it while it's hot.
PINEAPPLE, SWEET POTATO AND CHICKEN BAKE
This is an old favourite. It's from the Golden Circle website. My mum also has it in an old cookbook from the 1960's. It's a very easy recipe-just 10 minutes prep and into the oven (the original stated 20 minutes). To make this recipe gluten free ensure the soy sauce is gluten free

- Preheat oven to 180°C.
- Drain pineapple and reserve the liquid.
- Combine the oil garlic, honey, soy sauce and the reserved pineapple juice - mix well to make a marinade.
- Use 1/2 of the marinade mix to marinate the chicken for 10 minutes.
- Toss the pineapple pieces, onion and the sweet potato with the remaining marinade and place it into a casserole dish. Bake 10 minutes until the potato begins to soften. Bake uncovered.
- Add the marinated chicken and the marinade, wine or water, 3/4 of the spring onions,mixed spice sesame seeds. Cook for a further 30 minutes until the chicken is cooked through and the ingredients have caramelised.Add extra wine or water if needed.
- Serve over a bed of rice or noodles and sprinkle with the remaining spring onion.

JERK CHICKEN & PINEAPPLE TRAYBAKE

- Heat oven to 180C/160C fan/gas 4. Cut the thighs in half lengthways down one side of the bone. Put them in a large roasting tin. Mix the jerk paste with the lime zest and juice and pour over the chicken. Tuck the pineapple pieces, sweet potatoes and peppers in and around the chicken. Season, cover with foil and roast for 30 mins.
- Increase the oven temperature to 220C/200C fan/gas 7, remove the foil, baste the chicken and stir the veg in the cooking juices. Return to the oven for 20-25 mins.
- Meanwhile, cook the rice according to pack instructions, then stir in the beans, coconut oil, thyme leaves and seasoning. Cook for 2-3 mins to warm the beans through and melt the coconut oil. Serve 3 pieces of chicken per person with the vegetables, and the lettuce and rice on the side.

MOJO CHICKEN WITH PINEAPPLE
This simple, bright chicken dinner will transport you to a sunnier place, no matter what color the sky may be where you are. It starts with a citrusy, garlicky Cuban mojo. Instead of marinating the chicken in the mojo before cooking, you marinate it afterward: As the warm, broiled chicken sits in the mojo (for up to an hour), it soaks up the lively flavors.

- Pat the chicken dry and season all over with salt and pepper. Set aside.
- Heat the broiler with a rack 6 inches from heat source. On a foil-lined quarter sheet pan (or half sheet pan), drizzle the pineapple chunks and orange quarters with 1 tablespoon olive oil and season with salt and pepper. Toss to coat, then broil until charred in spots, 8 to 13 minutes.
- Meanwhile, make the mojo: On a cutting board, coarsely chop the garlic and jalapeño. Add the chopped cilantro stems, orange zest, lime zest, dried oregano and 1 teaspoon salt. Chop and smash the mixture until a coarse paste forms. Transfer the mixture to a large bowl, then stir in the lime juice, ground cumin and 2 tablespoons olive oil.
- Transfer the charred fruit to the mojo and transfer the chicken to the sheet pan. Coat with remaining 1 tablespoon olive oil and broil until cooked through and charred in spots, 15 to 20 minutes (no need to flip).
- Add the cooked chicken to the mojo, pineapple and orange wedges, and toss to coat. Let sit 5 minutes or up to 1 hour. Slice the chicken and serve on a platter, with the sauce poured over top and the charred pineapple and orange wedges alongside. Season to taste with salt and pepper, and sprinkle with cilantro leaves. Squeeze orange wedges over top as desired.
SPICY JERK POTATO & PINEAPPLE HASH

- Bring a large pan of lightly salted water to the boil. Add the potatoes and boil for 7 mins, then drain and leave to steam-dry for 5 mins. Meanwhile, heat the oil in a large frying pan over a medium heat and fry the bacon for 5 mins until crispy.
- Add the butter to the pan along with the potatoes and seasoning, and fry over a medium heat, turning occasionally, for 12 mins. Nestle the pineapple chunks in the pan and cook for a further 3 mins.
- Crack the eggs over the potatoes, cover the pan with a lid or large plate and cook for 5-6 mins over a medium-low heat until the whites are just set and the yolks are still runny. Finish with the coriander and a sprinkle of chilli.
