COCONUT FRENCH TOAST WITH SPICED ROASTED PINEAPPLE
Enjoy a new take on French toast for brunch. The custard is made using coconut milk and the dish is topped with a delicious spiced roasted pineapple

- Whisk the eggs, coconut milk and vanilla together in a wide, shallow bowl. Dunk the brioche slices into the mixture, letting each sit in the bowl for 1-2 mins on each side to soak up the liquid. The mixture should be completely absorbed by the brioche before cooking.
- Heat the oven to 200C/180C fan/gas 6. To prepare the pineapple, cut away the skin, leaves and any eyes, then slice the flesh into long, chunky pieces (you'll need about three per person). Cut out the tough core and discard. Place the pineapple pieces in a small baking dish, drizzle over the maple syrup and sprinkle with allspice. Roast for 15 mins, turning halfway through and brushing with the sticky syrup in the dish.
- Meanwhile, melt the butter in a frying pan over a low-medium heat until foaming. Scatter the desiccated coconut over a plate, and dip in each side of the soaked brioche slices to coat. (The bread will be very delicate, so do this carefully.) Cook the brioche slices for 3-4 mins on each side until golden and cooked through. Divide between two plates, then top each with a dollop of yogurt, three of the roasted pineapple pieces, then drizzle over any juices from the roasting tin.

- 1. preheat oven to 400°.
- 2. Mix pineapple and cream cheese. Cut a horizontal slit through one side of each bread slice to form a deep pocket. Stuff about 2 tablespoons pineapple mixture into each pocket, pressing down gently.
- 3. Pour egg substitute into a shallow bowl. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Dip stuffed bread slices and egg substitute. Add bread to pan; cook two minutes on each side or until lightly browned. Place Brown toasts on a baking sheet coated with cooking spray.
- 4. Bake at 400° for three minutes or until egg mixture on side of toast is cooked. Garnish with syrup and blueberries if desired. Makes five servings.

- Spray a 9x13-inch casserole with cooking spray.
- Spread a dollop of cream cheese onto a slice of bread, then cover with another slice to make a little sandwich. Repeat with remaining bread and cream cheese. Place sandwiches in a single layer in the prepared casserole.

- Preheat oven to 400F.
- In a saucepan, melt butter over moderate heat and stir in sugar until dissolved.
- Add pineapple, stirring well to incorporate.
- In a bowl, whisk together eggs, milk, half and half, reserved pineapple juice, salt, cinnamon and vanilla.
- Lightly grease a 13 x 9 pan and spread pineapple mixture evenly over bottom.
- Dip bread slices into milk mixture and arrange in one layer on top of pineapple mixture.
- Bake french toast in middle of oven 20-25 minutes or until bread is golden.

- Mix pineapple and 1 teaspoon cinnamon in a bowl. Spread each slice of bread with 1 1/2 teaspoon cream cheese. Top 2 slices with 1/4 cup pineapple mixture apiece; reserve remaining pineapple mixture. Place remaining slices of bread atop pineapple mixture and press lightly to make 2 sandwiches.
- Whisk remaining 1/2 teaspoon cinnamon, milk, egg, sugar, and vanilla extract in a shallow bowl. Lay each sandwich in milk mixture and let bread absorb mixture for a few seconds; flip and repeat.
