This recipe was found in the 2005 cookbook, The Best Recipes in the World, & I'm including it here for consideration during the ZWT6/

Pineappleade (Southeast Asia) image

Steps:

  • In a small saucepan combine sugar & water over medium heat. Cook for about 5 minutes, stirring occasionally, until sugar dissolves, then set aside to cool.
  • Put pineapple in a blender with enough water to cover the fruit, then puree.
  • Strain the pineapple mash, pressing on the solids to extract as much juice as possible.
  • Combine the pineapple juice with enough water (or sparkling water) to make 1 quart, then add lime juice & sugar syrup to taste.
  • Chill & serve.

1 cup granulated sugar
1 cup water
1 pineapple, peeled & cut into chunks
1/2 cup fresh lime juice

Asian Noodles with Chicken and Pineapple image

Steps:

  • In a large pot of boiling water, cook beans until crisp-tender, about 3 minutes. Add bell pepper, and stir to submerge. Using a small sieve, transfer vegetables to a bowl. Add noodles to boiling water, and cook until al dente according to package directions, 4 to 6 minutes. Drain, rinse thoroughly with cold water, and reserve.
  • Meanwhile, in a small skillet, bring 1 cup salted water to a simmer over medium heat. Add chicken breasts; cover, and cook 5 minutes. Turn off heat; let steam until chicken is cooked through, 5 to 10 minutes. When cool enough to handle, shred chicken with a fork.
  • In a large bowl, whisk together lime juice, soy sauce, and sugar. Add reserved vegetables and noodles, chicken, pineapple, mint, and 1/4 cup peanuts; season with salt and pepper. Toss to coat with dressing. Serve immediately, topped with remaining 1/4 cup peanuts.

PINEAPPLEADE

The subtle sweetness of this pineappleade makes it a perfect cool-down drink. The recipe comes from "Lucinda's Authentic Jamaican Kitchen" (Wiley, 2006), by Lucinda Scala Quinn.

Steps:

  • Bring 4 cups water to a boil in a medium saucepan over high heat.
  • Place pineapple peel, sugar, cloves, and ginger in a large heatproof pitcher. Pour boiling water into pitcher and stir to combine. Let stand at room temperature for 24 hours; strain. Transfer to refrigerator to chill; serve over ice.

Peel of 1 pineapple, washed
1/2 cup sugar
2 whole cloves
1 teaspoon peeled, freshly grated ginger (from about one 1/2-inch piece)
Ice, for serving

Great at a barbecue, with or without rum.

  • Put the pineapple in a blender with water to cover (you may need to do this in batches). Puree; strain, pressing on the solids to extract as much juice as possible.
  • Combine the pineapple juice with enough water (or sparkling water) to make 1 quart. Add lime juice and sugar syrup to taste. Chill and serve, garnished with mint.

  • Combine the pineapple juice, teriyaki sauce, soy sauce, lemon juice, pineapple, sugar, and garlic powder in a saucepan over medium heat; cook until the liquid has reduced to a syrup, about 5 minutes.   • Scoop 8 grams of pineapple jam and roll it into an oblong shape. Continue shaping the pineapple jam until finished. Place the rolled jam pieces into the refrigerator.
  • In a mixing bowl, cream the butter, margarine, icing sugar and salt for about 3 minutes. The colour of the butter and margarine should turn pale once done. Then, add in egg yolks and mix for another minute.
  • To the mixing bowl, pour flour, corn starch and milk powder until all ingredients are fully incorporated. The pastry dough should not be too dry nor wet. Add a bit of butter if the dough is too dry. Otherwise, add some flour if the dough is too wet.
  • Pipe the dough through the mould to a length of 7 cm each. Place the pineapple jam onto each piped dough leaving 1 cm at the top. This helps the dough to roll easily to wrap the jam.
