PINK APPLESAUCE BREAD
This is another recipe I found of my Grammie's tucked into the pages of another cookbook. It sounds wonderful and would be great for the Easter holiday or springtime brunch. This is a very light, moist bread and reminded me of biscuit dough. Since it has no eggs and is mostly applesauce it could be a vegan also a healthier bread...

Steps:
- 1. Sift together the dry ingredients. Beat into 1 1/2 cups pink applesauce. Add to dry ingredients with 2 tbsp melted shortening. Nuts may be added.
- 2. Bake in a greased and floured loaf pan at 350 degrees for 40 - 45 minutes or till done. Check it at about 35 minutes.
- 3. 3/25/12 ---Made this bread today and couldn't find pink applesauce in store but used 4 drops of pink coloring.
SPICED APPLESAUCE BREAD
With applesauce and spices, this bread is moist, delicious and great in lunch boxes. I also like it spread with cream cheese or peanut butter.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, combine the applesauce, sugar, oil, eggs and milk; beat well. Sift in the flour, baking soda, baking powder, cinnamon, nutmeg, allspice and salt; stir until smooth. Fold in the pecans. Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of the loaf comes out clean.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 x 5 inch loaf pans.
- Beat together eggs, sugar, and oil. Blend in applesauce, and then sour cream or buttermilk. Mix in flour, baking powder, soda, and cinnamon. Stir in raisins. Pour batter into prepared pans.
- Bake for 80 minutes. Cool on wire racks.

PINK APPLESAUCE
Martha Stewart developed this recipe when she discovered that lemon juice reacts with red-skinned apples and turns them pink. Use the reddest apples you can find and adjust the amount of sugar according to the sweetness of the apples. Enjoy!

- Quarter the apples, do not peel, and remove the seeds and cores. Place apples in a bowl, add the lemon juice, and toss thoroughly to coat.
- Place the apples, sugar, and 1 cup water in a heavy saucepan. Cover pot, and let simmer over low heat, about 30 minutes, or until the apples break down to a saucelike consistency.
- Remove pot from heat, uncover, and allow apples to cool slightly. Using a rubber scraper, gently push apples through a food mill or wire sieve. Discard the skins. Refrigerate until ready for use.

- In a large bowl, cream butter and sugar. Add the egg and applesauce; mix well. Combine the flour, baking soda, cinnamon, baking powder, salt, nutmeg and cloves.
