PIZZA BUNS

These are nice to serve for a snack. My Mom used to serve them for her Bridge Group. I have served them with a bowl of soup for supper. If you like pizza, I think you will like these. This mixture can be kept in the fridge for several days and spread on buns when you are ready to use.

Steps:

  • Slice bacon into small pieces and then brown it.
  • Drain fat from bacon.
  • Cut the pepperoni into slices and then quarter the slices.
  • Add onion, green pepper, and mushrooms to the bacon and heat until onions begin to soften. Stir often.
  • Add spaghetti sauce, pepperoni, oregano and garlic powder and heat through.
  • Cool.
  • Stir in cheese.
  • Spread on open-faced buns and broil until bubbly and cheese melted.
  • Enjoy!

  • In a large bowl, combine the cheese, sausage, pepperoni, peppers and onion. Stir in pizza sauce until combined. Place about 1/4 cup filling in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides toward center over filling. Moisten remaining corner with water and roll up tightly to seal., In a Dutch oven or deep cast-iron skillet, heat 1-2 in. of oil to 375°. Fry pizza rolls until golden brown, 1-2 minutes on each side. Drain on paper towels. If desired, serve with additional pizza sauce.

  • PUT PIZZA SAUCE IN BOWL.
  • DRAIN JUICE FROM MUSHROOMS AND ADD.
  • CHOP ONION& GREEN PEPPER INTO SMALL PIECES AND ADD TO MIXTURE ALSO.
  • GRATE MOZZARELLA CHEESE, LEAVE SOME FOR TOP OF BUNS.
  • MIX INGREDIENTS, UNTIL FAIRLY THICK CONSISTENCY.
  • SLICE TOMATOES, AND MEAT IF DESIRED.
  • PUT PIZZA BUN MIXTURE FROM BOWL ON BUNS OR BREAD, TOP WITH TOMATOES, MEAT, AND MOZZARELLA CHEESE.
  • PLACE BUNS ON COOKIE SHEET AND BAKE FOR 15 MINUTES OR SO UNTIL COOKED, THEN BROIL FOR A FEW MINUTES UNTIL CHEESE IS BROWN.

The elementary school I attended back in the 1950's used to make these, and were a favorite of most everyone. My wife and I spent a lot of time trying to recreate these when we were first married. Our kids (now in their 30's) still request these when they come to visit. We use canned pizza sauce but spice it up. Left-overs are easily reheated in the toaster oven.

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place bun halves, crust sides down, onto a baking sheet. Broil the buns until just toasted, about 1 minute. Watch them carefully, they burn easily. Set the toasted buns aside.
  • Turn oven heat to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, cook and stir the ground beef until the meat is browned and crumbly, about 10 minutes. Drain excess grease, and stir in the onion. Cook and stir the beef mixture until the onion is translucent, about 5 more minutes, then stir in the pizza sauce, Parmesan cheese, Italian seasoning, garlic powder, onion powder, crushed red pepper flakes, and paprika. Bring the sauce to a boil, and simmer for 10 to 15 minutes to blend the flavors, stirring often.
  • Spoon the beef sauce over the buns on the baking sheet, and top each bun with about 1/4 cup of the shredded mozzarella cheese. Return the buns to the oven, and bake until the cheese is bubbly and lightly browned, about 10 minutes.

Steps:

  • Meat Sauce:.
  • In a large frying pan, brown beef, breaking it up as it browns. Drain fat. Add seasoning, mushrooms and pizza sauce. Cook briefly on low heat. Refrigerate until ready to use.
  • Prepare Two Hour Fermipan Buns directions below. After second 15 minute rising, punch dough down and divide in half. Roll dough out 1/4-inch thick. Cut circles with floured 3 1/4-inch cutter.
  • On half of the circles, spread 3-4 tablespoons of the cool meat filling and 1 tablespoon grated cheese. Cover each with a plain dough circle. Seal edges by pinching with floured fingers.
  • Place on greased baking sheet 1-inch apart. Cover and let rise 1 hour. Before baking brush with sesame seed or poppy seed. Bake in 375 oven for 20 minutes.
  • Two Hour Fermipan Buns:.
  • Mix yeast with 4 cups flour. In separate bowl, whip eggs, sugar, oil and water. Add flour and yeast mixture to liquid mixture. Blend well. Add remaining ingredients. Knead. Let rise for 15 minutes. Punch down, but do not knead. Let rise again for 15 minutes.
  • To make the buns themselves: Punch down and form into buns. Place on a greased pan. Cover and let rise 1 hour. Bake in 350 oven for 15-18 minutes.
  • Makes 4-5 dozen buns.

Knead by hand or with the mixer, add more flour in small increments, as needed, until the dough comes together into a smooth dough. It shouldn't stick to your hands or be dry and crumbly. Grease a bowl and place the dough ball into the bowl. Cover with plastic wrap and let rise until doubled, about 30 - 45 minutes, depending on how warm your kitchen is.
  • Remove the dough to a floured cutting board. Cut the dough evenly in half. Cut each half in half again. Cut each piece in half again and then in half again, to make a total of 16 roughly equal sized pieces.
  • Take a piece of dough. Form it in to a rough ball, then stretch in to a circle about 4-5 inches in diameter. (You don't need to stretch them completely at this point. Once the dough has rested a few minutes on the baking sheet, they will be easier to shape, so you will be going back and stretching them out a second time later.) Place the dough circle onto the prepared baking sheet. Repeat with each piece of dough, placing 8 on each on the prepared sheets (you can place them fairly close together as they don't spread much, but don't allow them to actually touch each other).
