FISH VERONIQUE (LOW FAT, DIABETIC FRIENDLY)

I find this to be a really nice change of pace. It has a rich flavor and appearance while managing to be healty. I like to serve this with mixed broccoli and carrots and a low fat biscuit.

Fish Veronique (Low Fat, Diabetic Friendly) image

Steps:

  • Spray 10x6-inch baking dish with nonstick spray. Place fish in pan and sprinkle with salt and pepper.
  • Mix wine, stock, and lemon juice in small bowl and pour over fish.
  • Cover and bake at 350º F for 15 minutes.
  • Melt margarine in small saucepan. Remove from heat and blend in flour. Gradually add milk and cook over moderately low heat, stirring constantly until thickened.
  • Remove fish from oven and pour liquid from baking dish into cream sauce, stirring until blended. Pour sauce over fish and sprinkle with grapes.
  • Broil about 4 inches from heat 5 minutes or until sauce starts to brown.

1 lb white fish fillet (cod, sole, turbot, etc.)
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup dry white wine
1/4 cup chicken stock or 1/4 cup broth, skim fat from top
1 tablespoon lemon juice
1 tablespoon soft margarine
2 tablespoons flour
3/4 cup skim milk or 3/4 cup 1% low-fat milk
1/2 cup seedless grapes

Steps:

  • Sprinkle fish with salt and pepper; fold in half. Place fish in 10-ince skillet; add wine, water, shallots and lemon juice. Heat to boiling; reduce heat. Cover and simmer until fish flakes easily with fork, 4 - 5 minutes. Remove with slotted spatula to heatproof platter, keep warm. Add grapes to liquid in skillet. Heat to boiling; reduce heat. Simmer uncovered 3 minutes. Remove grapes with slotted spoon.
  • Heat liquid in skillet to boiling; boil until reduced to 1 cup. Pour liquid into measuring cup; reserve. Heat 2 Tbl butter in skillet until melted; stir in flour. Cook and stir 1 minute; remove from heat. Stir in reserved liquid and the whipping cream. Heat to boiling, stirring constantly.
  • Boil and stir 1 minute. Add 2 Tbl butter, stir until melted. Drain excess liquid from fish; spoon sauce over fish. Set oven to broil. Broil fish 4 inches from heat just until sauce is glazed, about 3 minutes. Garnish with grapes.

Classic Sole Meunière image

Steps:

  • For fish:
  • Place flour in pie dish. Rinse fish; pat with paper towels. Sprinkle both sides of fish with coarse salt and freshly ground pepper. Dredge fish on both sides with flour; shake off excess. Place on platter.
  • Heat oil in large skillet over medium-high heat until oil is hot and shimmers. Add butter; quickly swirl skillet to coat. When foam subsides, add fish and cook until golden on bottom, 2 to 3 minutes. Carefully turn fish over and cook until opaque in center and golden on bottom, 1 to 2 minutes. Divide fish between 2 warmed plates; tent with foil. Pour off drippings from skillet; wipe with paper towels.
  • For sauce:
  • Place skillet over medium-high heat. Add butter; cook until golden, 1 to 2 minutes. Remove from heat; stir in parsley and lemon juice (sauce may sputter). Spoon sauce over fish. Serve with lemon wedges.

1/2 cup all purpose flour
4 sole fillets (each about 3 to 4 ounces)

2 tablespoons vegetable oil or canola oil
2 tablespoons (1/4 stick) unsalted butter
Sauce:
1/4 cup (1/2 stick) unsalted butter, cut into 4 pieces
