MEXICAN WEDDING COOKIES (POLVORONES DE CANELA)
The name of these buttery cookies comes from the word "polvo," which means dust in Spanish, and refers to their cinnamon-sugar coating, as well as the cookie's crumbly texture.

- In a medium bowl, whisk together flour, salt, and 1 1/2 teaspoons cinnamon.
- In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and 1 cup confectioners' sugar on medium speed until smooth. Beat in vanilla. Reduce speed to low and gradually mix in flour mixture until incorporated. Shape dough into a square and wrap in plastic; refrigerate 1 hour.
- On a lightly floured surface, roll out dough 1/2 inch thick. Using a 2 1/2-inch round cutter, cut out cookies. (Scraps can be rerolled once.) Divide evenly between two parchment-lined baking sheets. Using a 3/4-inch round cutter, cut out a hole in the center of each cookie. Refrigerate until firm, about 30 minutes.
- Meanwhile, preheat oven to 350 degrees. Bake, rotating halfway through, until edges begin to brown, about 20 minutes. Let cool on sheets 5 minutes, then transfer to a wire rack and let cool completely.
- In a small bowl, stir together remaining 2 teaspoons cinnamon and 1 cup confectioners' sugar. Working with one cookie at a time, toss in cinnamon sugar until thoroughly coated. Cookies can be stored in an airtight container at room temperature up to 3 days.
MEXICAN WEDDING COOKIES
This recipe was brought to The Times in a 1990 article about traditional Christmas cookies, but we think these butter-rich confections are delicious any time of year. Sometimes called Mexican wedding cakes (or polvorones or Russian tea cakes or snowballs), their provenance is often debated, but this much is true: they are dead-simple to make and addictive to eat. This version is done completely in a food processor, so you can clean-up in minutes, and get to the important business at hand: eating cookies and licking your fingers.

- Put pecans, 1 cup of the sugar and salt in food processor and blend until nuts are ground fine. Cut the butter into tablespoon-size pieces and add it to nut mixture with processor running. Process until smooth. Add vanilla extract. Add flour and continue blending, using pulse mechanism of processor.
- Scrape dough into a bowl. Cover tightly and refrigerate one hour. 3. Preheat oven to 350 degrees.
- Scoop dough with tablespoon and form 1-inch balls by rolling dough between palms (lightly flour hands, if necessary). Place balls 1 1/2 inches apart on ungreased cookie sheets.
- Bake 15 minutes or until the cookies barely begin to brown. Cool for 2 minutes. Use small spatula to lift cookies from sheets. Roll the cookies in the remaining sugar.

- Preheat oven to 400^F.
- In a large bowl, beat shortening and butter until fluffy.
- Add sugar a little bit at a time.
- Add egg yolks, orange juice, and peel.
- Stir in flour with spatula.
- On a floured surface, roll out the dough to 3/4". Cut out 2 1/2" circles and place them on a greased baking sheet. Roll the dough scraps and continue to roll until all the dough is used.
- Bake for 25 minutes. Be careful not to overcook them--they are done when they are barely starting to tan.
- Transfer to a rack to cool.
- Sprinkle with powdered sugar through a fine sieve.

- Add sugar; beat'til fluffy.
- Stir in flour, nuts and a dash of salt.
- Cover; chill 1 hour.

- Preheat the oven to 350 degrees. Let the butter come to room temperature. Combine 1/2 cup of the powdered sugar with the butter. Whip the butter and sugar together until they are well incorporated and have a “creamed” texture (see photos below). You can use a mixer or a good ‘ol fork and some elbow grease. Then stir in the vanilla extract.
- In a separate bowl, combine the 1.5 cups of flour with 1 tsp of cinnamon and 1/4 tsp of salt. Mix them until the are evenly combined.
- Stir the flour mixture into the creamed butter and sugar mixture. If the mix is still too sticky to form into balls with your hands, add more flour, 1/4 cup at a time. I added somewhere between 1/2 to 3/4 cup more after the initial 1.5 cups.
- Shape the dough into 24 evenly sized balls (think ping pong balls). Combine the remaining 1/2 cup of powdered sugar and 1 tsp of cinnamon in a bowl and roll each ball in the sugar mixture to coat.

- Using a food processor, blender, nut mill or knife, finely chop the pecans. Add the powdered sugar to the processor or blender (if that's what you used) and grind or chop. If done by hand, just mix together.
- Mix the flour and salt together in a large mixing bowl. Drop in the chunks of butter and the vegetable shortening in teaspoon amounts. Begin to mix with your hands, until the butter and vegetable shortening are mixed in with the flour and salt. The mixture will turn into a coarse dough, with chunks of butter and shortening mixed throughout.
- Add in the sugar and pecan mixture and work it all in. Crack the egg into the mixture thoroughly combine, using your hands. In less than a minute, the dough should be soft and malleable enough to be turned into a ball. Don't knead more than necessary, you just want it to come together into a homogeneous mass.

- Lightly toast the pecans in a skillet over medium-low heat, stirring frequently, under they are nice and fragrant. Remove from heat. You can either use a food processor to finely chop the pecans (about 10 pulses should do it, don’t blend so well that you end up with pecan butter) or finely chop the pecans with a chef’s knife on a cutting board (you might want to let the pecans cool a little before chopping).
- In a large bowl, beat the coconut oil or butter, pumpkin purée, cane sugar, vanilla, cinnamon, ginger, allspice and salt with an electric mixer on medium speed until light and fluffy. Since I used melted coconut oil, it didn’t get light and fluffy but it did blend well (I wonder if it would get light and fluffy with solidified coconut oil at room temperature?). Gradually add the chopped pecans and flour, beating on low speed after each addition until well blended.
- Using your hands, shape the dough into 1-inch balls. Place the cookies on the baking sheet, leaving about 1 1/2-inch space around each cookie (the cookies will not expand in size).
