Steps:
- Pour tequila, French liqueur, freshly squeezed pummelo juice, and freshly squeezed lemon juice, simple syrup and pinch of salt into shaker and shake with ice.
- Strain into glass and top with sparkling wine.
- Garnish with Meyer lemon zest.
P.O.M. SPRITZER
This delightful blend of citrus and tropical fruits would be a lovely nonalcoholic addition to a spring or summer brunch! The P.O.M. name stands as an abbreviation for the three fruits included.

Steps:
- Peel pomelo and separate the fruit from the pith. Place fruit segments into a high performance blender (such as a Vitamix®). Blend on variable 1, quickly switching to variable 10. Blend for 1 minute.
- Peel mango, remove pit, and cut into slices. Add to the blender and blend for another minute.
- Cut oranges in half and squeeze juice into a small container. Strain to remove pulp, if desired, and pour juice into the blender. Add club soda and blend on high speed for 1 minute. Serve chilled.

- In a large pitcher, combine the pomelo or grapefruit juice, lime juice, simple syrup, tequila or vodka, and club soda and stir to combine. Keep in the fridge until ready to serve.
- Fill a small plate with a rim with water (make sure the plate is large enough to fit the rim of the inverted glass). Place a couple of tablespoons of coarse salt in another (same thing about the size of the plate). Dip each glass into the water, and then into the salt, making sure it coats the rim fairly evenly. Fill the glasses with ice, and pour the drink into the glasses. Garnish with the citrus wedge or slice and a basil leaf or two.
