POOR MAN'S PIE
This is an awesome recipe that I got from my coworker. It can be modified in many ways, including for the slow cooker. It's a simple meal of things you often already have on hand that really sticks to the bones, and it can also be a fun way to use up some leftovers.

POOR MAN'S CASSEROLE
This is a recipe that my mom made when we were growing up! It really is one of my families favorite quick meals! It is called Poor Man's Casserole because almost everyone should have the ingredients in their kitchen! This is a very versatile dish because you can add as little or as much of the ingredients to suit your family.

POOR MAN'S MAC & CHEESE CASSEROLE
My husband's Great Grandma made this for him and his sibilings when they came to visit. Only five ingredients, simple and easy to make. Ground beef, corn, cream style corn, peas, and mac & cheese. A real kid pleaser and one of my husband's favorites. I couldn't find anything else like it on the Zaar.

POOR MAN'S CASSEROLE
You can use cream of mushroom soup but I actually prefer the cream of chicken soup. You can use canned chicken broth in lieu of the water. I haven't tried using canned beef broth yet with cream of mushroom soup but it sounds like a good idea now. YEARS ago, when I was trim & young, I found the original recipe in the magazine our...

Steps:
- 1. Preheat oven to 350 degrees F. Cook the ground beef fully. I like to use a big chicken cast iron fryer for this as it can go into the oven when I am ready. Drain off the hamburger & if desired do this in a colander and run hot tap water over it all to remove extra grease.
- 2. Add the cooked hamburger back into the skillet or in the casserole dish of choice. Add the cut up potatoes, then the chopped onion. Then top with the peas.
- 3. Add the soup and the water together. Pour this all over the casserole. Cover with aluminum foil. Takes about an hour to bake at 350 degrees F, but you are waiting on the potatoes and onions to be done & this dish to look nice, hot, & bubbly.
- 4. I am fine with this recipe as is, and have had it to be like a nice gravy on all, much better to let sit at room temperature 30 or so minutes so it melds. But has came to my attention that maybe others might want some more flavors going on. Inspired by other recipes I would say that I would even attempt to add a pack of DRY ONION SOUP MIX to this to see how that works. Onion & peas are a nice combo any way, so not sure how that could fail. Maybe in lieu of one can of the water, add a nice can of beef broth or consume? Any other suggestions are & will be welcomed. As I never would have considered onion soup mix had someone else found it just lacking in taste to them.

Steps:
- Start off with cooking the white rice.
- As the rice is cooking start cooking your beef, I like to season it with pepper and mesquite seasonings, but you can also use garlic salt or any other seasonings you prefer.
- Once the meat and rice is done cooking mix together the meat, rice, and soup.
- Top it with the shredded cheddar cheese.
- Bake in the oven on 375 for about 30 minutes or until the cheddar is bubbly and starting to brown,.
- * Sometimes I like to mix corn into it to give it a little more nutrition/flavor.

Steps:
- Preheat the oven to 350°F Peel and slice the potatoes about 1/2 inch thick, then cook in salted water just until tender (do not overcook). Drain and run under cold water to stop the cooking.
- Cut half a pound of your favorite bacon cut into 2 inch pieces setting aside about 3 uncooked slices for top. In a frying pan, cook the balance of the bacon pieces until it just starts to crisp.
- Slice the boiled eggs width wise about 1/4 inch thick.
- Using a deep casserole dish, layer 1/3 of the potatoes, 1/3 of the egg slices, and 1/2 of the cooked bacon. Repeat the layer. For the final layer, add the remaining potatoes, eggs and the raw pieces of bacon on top. I like to pour the bacon fat remaining in the frying pan over the whole dish.
- Bake uncovered in the oven for approximately 35 minutes, or until the bacon on the top is crisp. Enjoy.
