SPICY SAUTéED FUZZY MELON

Resembling a mottled green zucchini with sparse, bristly hair, fuzzy melon is a type of gourd popular in Chinese cooking. Often stuffed with ground pork, it absorbs flavors easily and also shines in simpler recipes, like this one from Joanne Chang of Flour Bakery in Boston.

Spicy Sautéed Fuzzy Melon image

Steps:

  • Heat the oil in a large, deep skillet over high heat until smoking. Add the garlic, ginger and melon and sauté for 2 minutes, until the melon has absorbed the oil. Add 1/4 cup water and sauté, stirring occasionally, until it evaporates. Repeat this process, adding water in 1/4-cup increments, until the melon is tender, 6 to 8 minutes. Stir in the soy sauce, vinegar and red-pepper flakes and sauté for another minute. Add salt and pepper to taste and serve immediately.

Steps:

  • 1. Slice pork thin. Peel fuzzy melon cut in half lengthwise, then in either 1-inch strips, or 1/4-inch slices. 2. Bring stock to a boil. Add pork and melon and simmer, covered, 8 to 10 minutes. Add salt and sugar simmer 2 minutes more. VARIATIONS: * For the pork, substitute 4 dried scallops (soaked) or 8 dried shrimp (soaked). * For the fuzzy melon, substitute 1 Chinese okra, trimmed and cut in 1/2-inch slices.   • Combine marinade ingredients with ground pork. You can use chicken or turkey if you like. Let sit for 10-15 minutes
  • Scrape fuzzy melon with a knife to remove fuzz and top layer of melon. Once scraped it should still be light green in color. You can use a peeler but it will take more of the squash than necessary and the pale green layer will be removed. It's NBD. Cut melon in half lengthwise and then cut each half lengthwise to create quarters. Cut each quarter crosswise into ~1/4 inch thick slices. Set aside.
  • Heat 2 tsp of vegetable or peanut oil in a medium saucepan (3-4 qt). Add ginger and pork. Saute' until pork loses pinkness.
  • Add water/stock, mushrooms, and turnip to saucepan. Bring to a boil and lower heat to a low boil for 15 minutes.
