PORK AND KIMCHI SOUP

This kimchi soup is a recipe from my childhood. Not extremely spicy, but has some kick.

Pork and Kimchi Soup image

Steps:

  • Combine kimchi, kimchi juice, pork, hot pepper paste, and sugar in a large pot. Pour in water and bring to a boil over high heat. Cook for 30 minutes.
  • Add tofu and reduce heat to medium-low; cook until heated through, about 10 minutes. Add green onions and remove soup from heat.

½ pound pork shoulder, cut into bite-sized pieces
2 tablespoons hot pepper paste
1 teaspoon white sugar

Pork and Tofu in Kimchee image

Steps:

  • Heat the sesame oil over low to medium heat, add the garlic and ginger and cook until it is softened a little and fragrant.
  • Turn the heat up to medium and add the pork.
  • When the pork has changed colour add the leek and cook until the leek is golden brown.
  • Add the sake and the kimchee, stir, then add the soy sauce.
  • Heat gently.
  • Lastly add the tofu and serve.

1 garlic clove, minced
2 teaspoons grated ginger
150 g pork fillets, finely sliced
1 leek, sliced diagonally
1 tablespoon sake
200 g kim chee
1 teaspoon soy sauce
200 g silken tofu, rinsed, blotted dry with paper towel, and cut into small dice

Tofu with Pork Belly and Kimchee image

Steps:

  • Cut the tofu into rectangles and sprinkle with a little salt. Steam, saute or even microwave the tofu, just to heat it up.
  • Heat a saute pan over high heat for 30 seconds. Add the sliced pork belly and cook for about 5 minutes, until cooked through. Add the kimchee, onion, jalapeno, green onion, garlic, sugar, oyster sauce, chile flakes, corn syrup and soy sauce. Saute for 3 minutes.
  • Plate the tofu like dominoes and top with the kimchee-pork belly mixture. Drizzle with sesame oil and garnish with sesame seeds.

1 package firm tofu
Salt
150 grams pork belly, thinly sliced (slice thicker if preferred)
12 ounces fermented kimchee, chopped
1 cup sliced onion
1 jalapeno, sliced
1 green onion, cut into 2- to 2 1/2-inch pieces
1/2 teaspoon crushed garlic
1 teaspoon sugar
1 teaspoon oyster sauce
2 tablespoons Korean chile flakes
2 teaspoons corn syrup
2 teaspoons soy sauce
1/2 teaspoon sesame oil
1/4 teaspoon sesame seeds

  • Heat your wok or pan over high heat. Brown the pork belly—no oil needed! Add the onions. Once they start to turn a little bit translucent, add the kimchi—juice and all! Stir everything to combine. Then add your rice cakes. If yours were frozen, rinse them first to break them up and soften them a bit.
  • Make a little well in the pan, and then take two heaping tablespoons of the gochujang and plop it in the center. Use your spatula to “cook” the paste and let it dissolve into the sauce. Then stir-fry everything until well combined.
  • Fill the kimchi jar with about a cup of water. Put the lid on, shake it around to pick up any peppery goodness that might have been left behind, and add it to the pan. If you find that the rice cakes are sticking to the pan, then you can add the water sooner rather than later.
  • Lower the heat to medium-high heat and cover for 5 minutes. This is to ensure that the rice cakes cook through. While that’s happening, slice your tofu block in half lengthwise, and then slice each half into half inch slices.
