HOT TODDY
Whether you're sick in bed or fresh off the slopes, a hot toddy warms everything up. The classic formula of whiskey, sugar and hot water is like the steamy cousin of an old-fashioned, but these days, a lot of other ingredients (citrus juice, apple cider, various spices) get added in the name of innovation, with mixed results. This version cozies up to the original, with a few optional additions based on preference. First, warm the mug with hot water, which primes the vessel to hold heat longer, yielding a truly hot toddy to the last sip. Then add scotch or bourbon, or for a modern twist, rum, cognac or amaro. Stir in a little honey, maple syrup or Demerara sugar, add hot water and stir to dissolve. Garnish with lemon peel and spices, if you like.

- Fill a 6-ounce heatproof mug or glass with boiling water and set aside, 1 minute. Pour out the water then add the spirit and honey to the warmed glass. Top with boiling water and stir until the honey is dissolved. Garnish with the lemon peel and cinnamon stick or star anise, if desired. Let cool slightly before enjoying.

- Bring 2 cups water to a boil in a small saucepan or tea kettle. Remove from heat and divide between two mugs. Divide bourbon, honey, lemon juice, cinnamon sticks, and cloves between mugs. Let stand 5 minutes, then stir and serve, garnished with lemon rounds.

- Whisk the whisky and honey together and split between 2 heatproof glasses. Add half of the cinnamon stick to each, then top up with 200ml boiling water.

MODERN HOT TODDY
Think of this drink as the darker, richer cousin to the classic hot toddy. Choose an amaro with citrus notes that is medium in body and bitterness, and use a six-ounce serving vessel. (The smaller size will help the drink retain heat.) Warming the serving vessel and the ingredients themselves helps to keep the hot toddy, well, hot, but if you're keen on skipping one of the steps to a superiorly hot toddy, make it warming the ingredients - and drink with the urgency that choice demands.

- Bring a kettle of water to a boil. Fill a 6-ounce heatproof mug or glass with boiling water and set aside, 1 minute.
- Pour out the water, then add a tea bag or strainer and sugar to the warmed glass. Top with 4 ounces boiling water.
- As the tea steeps, set another small heatproof mug or glass in a small saucepan or baking dish. Pour more boiling water around it, so the water comes halfway up the sides. Add the rum and amaro to the mug, and allow to sit and warm through.
- Once the tea has steeped for 3 to 5 minutes, remove the tea bag or strainer, add the now-warmed rum and amaro mixture, stirring to ensure the sugar is dissolved. Stir in the lemon juice and finish with a lemon slice. Serve immediately.
HOT TODDY
A classic hot toddy is a perfect way to warm up on a cold evening-and it only requires three ingredients and some boiling water.
