CHICKEN IN POTATO BASKETS

Chicken in Potato Baskets image

Steps:

  • In a large bowl, combine the potatoes, butter, salt and pepper. Press into six greased 10-oz. custard cups; set aside., In a large saucepan, saute onion in butter. Add the flour, bouillon, Worcestershire sauce and basil. Stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken and peas. Spoon into prepared crusts., Bake, uncovered, at 375° for 30-35 minutes or until crust is golden brown.

Steps:

  • Place each chicken breast on a piece of heavy duty foil.
  • Mix the oil, rosemary, thyme, basil and garlic.
  • Drizzle over the chicken.
  • Top with potatoes, squash, onion, butter, salt and pepper.
  • Fold the packets up securely.
  • Bake on a cookie sheet at 375* for 35-40 minutes, until chicken juices run clear.

Steps:

  • Combine broth, vinegar, oil, garlic and spices in medium bowl. Set aside.
  • Dice potatoes into large bite-size pieces. Add to broth mix.
  • Cut chicken breasts into bite-size pieces. Add to broth mix.
  • Stir until potatoes and chicken are covered with the broth mix.
  • Make foil packets by putting two sheets of tin foil together. Put chicken and potatoes in the center of the foil and fold the foil to make a pocket. You may want to divide chicken and potatoes into individual serving sizes and make separate foil packets.
  • Cook on grill until potatoes are soft and chicken is done, about 30 minutes.

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Stir together the vegetable oil, cider vinegar, garlic powder, black pepper, salt, basil, and thyme in a bowl; set aside.
  • Lay out 4 12x12 inch squares of aluminum foil. Place 1 chicken breast in the center of each square, top with potatoes, onions, bell peppers, and mushrooms. Ladle 1/4 of the sauce on each and fold the foil around the ingredients to form four sealed packets.
  • Grill the packets on the preheated grill for 30 to 40 minutes, until the internal temperature of the chicken breasts reaches 170 degrees F (75 degrees C).
