DENVER OMELET PIE

- In a large bowl, beat the eggs, onion powder, thyme, salt and pepper. Stir in the potatoes, cheese, ham and green pepper. , Pour into a greased 9-in. pie plate. Bake at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Garnish with tomato slices.

Steps:
- Cook potatoes, onions and garlic in 2 Tbsp. hot oil in large skillet on medium heat 10 to 12 min. or until potatoes are tender, stirring occasionally.
- Whisk eggs in large bowl. Add potato mixture, ham, 1/2 cup cheese and pepper; mix well.
- Heat remaining oil in same skillet on high heat. Add egg mixture. Reduce heat to low; cook 12 min. or until egg mixture is almost set.
- Slide omelet onto dinner plate. Place skillet upside-down over omelet; carefully turn plate and skillet over to flip omelet. Sprinkle with remaining cheese; cook 3 min. or until cheese is melted and center of omelet is set.

- Scrub potatoes, pare and slice very thin.
- Put potatoes in a large glass bowl and cover with cold water; set aside.
- Prepare pie crust mix according to package directions; wrap in plastic and set aside.
- Using a food processor or food grater, coarsely grate Cheddar cheese. Put in a small bowl; add flour and toss to mix well.
- Preheat oven to 350°F.
- Lightly grease a shallow two quart oval, round or rectangular baking dish.
- Drain potatoes thoroughly; pat dry with paper towels. Alternately layer potatoes with sliced onion, ham and cheese-flour mixture, sprinkling with garlic, salt, pepper and nutmeg as you layer.
- Pour on milk; dot with butter and set aside.
- On a lightly floured surface, roll pastry out to a 15 x 11 inch rectangle, or a 13 inch circle, depending on the size and shape of your baking dish. Gently lift pastry and place on baking dish to cover potato mixture completely.
- Turn edges of pastry under and flute decoratively with your fingers. Cut four gashes in pastry to allow steam to escape while baking.
- Mix egg yolk with one tablespoon of the half and half cream; brush over the pastry to glaze.
- Bake 60 minutes or until pstry is golden brown and potatoes are done.
- Remove from oven; pour remaining half and half cream through the vents in the top of the pastry. Let stand 15 minutes before serving.

- Roll each sheet of pastry into 12 inch square. Place one sheet of pastry in quiche dish. In a skillet, melt butter. Add potatoes, onions, and seasonings. Cover and cook over medium heat 10 - 12 minutes until potatoes are tender. Set aside Make two thin omelets Sprinkle 1 cup shredded cheddar over pastry. Top with one omelet and half of potato mixture. Layer with 1½ cups cubed cooked ham, then remaining potato mixture. Sprinkle 1 cup shredded cheddar. Cover with second omelet and second sheet of puff pastry. Seal and flute edges. Combine 1 egg, lightly beaten and 1 tbsp. water and brush over pastry Bake at 375° for 30-35 minutes until golden brown.
POTATO HAM OMELET PIE
I originally got this recipe from a magazine(maybe Taste of Home?). Everyone loved it and it has become one of my husbands favorite meals. I made a big batch when my in-laws were visiting once and my mother-in-law ate on it for 3 days! It's all she wanted for breakfast AND lunch until it was all gone!

- 1. Preheat oven to 375
- 2. On lightly floured surface, roll each puff pastry sheet to a 12 in. square. Place one sqare in lightly greased 10 in quiche dish or 10 in. glass cake pan. Set aside.
- 3. Cook potates, onion,and salt in the 1/4c melted butter for 10-12 minutes, stirring occasionally until potatoes are tender and starting to brown. Set aside.
- 4. Combine the beaten eggs with the 2T water, salt and pepper to taste. Heat and spray a 10 in skillet or omelet pan and add half of the eggs. Cook omelet, lifting edges to let uncooked eggs flow underneath. Cook until set, then slide from pan onto a plate. Repeat with remaining egg.
- 5. Sprinkle 1c of the cheese over the pastry in the dish. Top with one of the omelets, the potatoes, the ham, another cup of cheese and the other omelet. Carefully place the remaining rolled puff pastry sheet on top of fillings. Flute edges of pastry and trim. Brush top with the egg/water mixture.
- 6. Bake 30-35 minutes until pastry is golden brown. Let stand 10 min. before cutting into wedges to serve.

- Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
- Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with its baking parchment on a baking tray. Reserve 1 tbsp of the crème fraîche, then spread the rest over the pastry, leaving a 2cm border around the edge. Season. Layer the potatoes, ham and cheese over half of the pastry, seasoning the potatoes as you go.
- Fold over the other half of the pastry and use a fork to seal the edges. Trim with a knife for a neat finish - the pie should look like a big sausage roll. Mix a little water into the reserved crème fraîche, then brush all over the pastry. Make a few cuts along the length, then bake for 35-40 mins until golden. Leave to cool for 10 mins, then serve with a salad, if you like.
