SOUTHERN DILL POTATO SALAD
My mother made this potato salad for me as a boy growing up in Spanish Fort, Alabama (on the Gulf of Mexico). I have re-created it with a slight modern tangy twist. I know you will like it! Best taste is achieved when the salad is covered and placed in refrigerator overnight.

Steps:
- Place the potatoes in a large pot, cover them with water, and bring to a boil over high heat. Reduce the heat to medium-low, and simmer until the potatoes are cooked through but still firm, about 20 minutes. Remove from the water, let cool, and cut the potatoes into chunks. Set the potatoes aside.
- In a bowl, stir together the sour cream, mayonnaise, apple cider vinegar, Dijon mustard, onion, celery, celery salt, and salt and pepper until well mixed.
- Place the potatoes and eggs in a large salad bowl, and sprinkle with dried dill. Pour the dressing over the potatoes and eggs, and mix lightly. Cover and refrigerate the salad for at least 30 minutes. Serve cold.

POTATO SALAD WITH DILL PICKLES
A family loved recipe from my Grandmother, who made it this way specifically to cover up the taste of mayonnaise for my Grandpa. :)

Steps:
- Boil potatoes in salted water until fork tender.
- Remove from water and cool till you can handle.
- Peel potatoes and dice into bite-sized pieces.
- Hard boil the eggs and immediately cool in cold water.
- Peel the shells as soon as cool enough to handle.
- Mix together in a small container the 1 cup of mayonnaise, 1/3 cup of spicy brown mustard and 1/4 cup pickle juice(remember to add the pickle juice slowly to taste/thickness).
- In a large bowl: combine potatoes, hard-boiled eggs, pickles, celery and onion.
- Pour on dressing, mix and toss.
- Salt & Pepper to taste.
- Slice extra egg to decorate top and sprinkle with paprika.
- Refrigerate at least one hour or overnight.

DELICIOUS POTATO SALAD WITH DILL PICKLE
This is a simple and very tasty potato salad. It looks great with all the green in it. There's never any left over when I serve it. This recipe can easily be doubled for a party.

Steps:
- Peel and cube potatoes. Boil until just tender.
- Mix all other ingredients in a medium size bowl.
- Drain cooked potatoes and let cool completely.
- Mix potatoes into mayonnaise mixture.
- Serve or refrigerate until ready to serve. It tastes best if you refrigerate it at least 4 hours, so that flavors meld.
SUSAN'S DILL PICKLE POTATO SALAD
Mom taught me how to make potato salad and she NEVER put sweet pickles in it. Always used dill pickles. I have had many compliments and requests to make this salad for get togethers.

Steps:
- Bake potatoes (microwave or oven) as they don't get soggy like boiled ones, cool to handle. Peel and cut in large chunks.
- Use large bowl to mix potatoes, celery, pickles, onion and eggs. Mix carefully so as not to mash potatoes.
- Mix dressing by mixing last 4 ingredients together in a small bowl or just add to salad bowl & mix. Stir to coat all ingredients and taste for saltiness.
- Chill several hours or overnight. Taste for seasoning & add more of anything you like (salt, mustard, pickles, olives etc). If too dry add more mayo.
- DELICIOUS!

- prepare potatoes: A few hours prior to serving, place potatoes in a medium-large pot and fill with water to cover by a few inches. Toss in the tablespoon of kosher salt. Bring water to a boil and cook potatoes until fork-tender, about 25 minutes or so. Transfer potatoes to colander in the sink and run cold water over them. Let drain and cool completely. If you are able to prepare the potatoes the day prior, that's even better. The potatoes will slice up cleaner.
- prepare dressing: In a small bowl, combine mayonnaise, yellow mustard, Dijon mustard, and vinegar. Cover and place in refrigerator to chill.
- assemble salad: Cut cooled potatoes into chunks, about 3/4" in size. Transfer to a large mixing bowl, and then add pickles (reserve a few pieces to sprinkle over the top), celery, onion, eggs, and dill. Fold to combine. Drizzle about half of the dressing over the salad ingredients, and then fold to evenly combine. If you want it saucier, add more dressing. I like it well-dressed and tend to use nearly all the dressing. Sprinkle with 1-1/2 teaspoons (or to taste) kosher salt and the black pepper, and fold again. Top with reserved pickle pieces, some freshly ground black pepper, and some paprika. You can serve the potato salad immediately, but I prefer to cover and let chill for a couple hours prior to eating.
