NEW POTATO & TUNA SALAD

Steps:
- Boil potatoes for 15 mins or until tender. Drain and cool under cold water. Meanwhile, make the dressing by mashing anchovies with the mayonnaise. Add the white wine vinegar or lemon juice and season to taste with black pepper. Tear the leaves from the lettuce into a large bowl. Chop spring onions and tip them in. Slice the potatoes and add to the bowl, then drain the tuna and flake into the bowl. Drizzle the dressing over and serve.

SUMAC FISH & COUSCOUS SALAD (21 DAY WONDER DIET: DAY 3)
This is Day 3: Dinner, on the 21 day Wonder Diet. You can use any firm fish that is n season for this recipe. Sumac is a type of Middle-Eastern Spice, available from supermarkets. You can cook the fish without it if you like. The first time I made this recipe, I was unable to buy sumac, so I used a Portugese spice blend instead.

Steps:
- Spray medium pan with cooking oil; cook onion and garlic over heat, stirring, 1 minute. Add zucchini and tomatoes; cook, stirring occasionally, about 1o minutes or until vegetables soften. Remove from heat, stir in mint.
- Bring stock to a boil in a small saucepan; remove from heat, stir in couscous, stand 5 minutes. Stir into zucchini mixture.
- Meanwhile, preheat grill. Sprinkle fish with sumac; grill until cooked, turning once.
- Serve couscous topped with fish and lemon wedges.

- Cook rice in medium saucepan of boiling water until tender; drain.
- Meanwhile, spray medium frying pan with cooking oil; cook onion and garlic over heat, stirring, until onon softens. Add beef and spices; cook, stirring, until beef is browned.
- Add undrained tomatoes, paste and stock; bring to a boil. Reduce heat; simmer, covered, 10 minutes. Uncover; simmer about 10 minutes or until mixture thickens slightly. Stir in beans.
- Serve rice and chilli con carne topped with yogurt. Sprinkle with parsley.

- Combine all ingredients in a medium bowl, mix thoroughly.

- Goes well with crackers or as a sandwich spread!
COMPLETELY DIFFERENT TUNA & EGG SALAD (NO MAYO)
Not your usual tuna or egg salad, this can be enjoyed as is, in a sandwich, on top of greens, or any other way that sounds good to you. If you want to add a touch of mayo for creaminess, go ahead- but it's plenty good without! You can change up the ingredients to suit what you have on hand, or what you like- chopped pickles instead of capers, oil packed tuna instead of water packed, different herbs, shallot instead of green onion... This is just how I first made it based on what was in my kitchen.

- Combine tuna, eggs, capers, pepper, onion and tarragon gently in a bowl.
- Whisk together vinegar, oil, salt and pepper in another small bowl.
- Fold the dressing into the tuna mixture. Taste for seasoning, and add more salt or pepper as needed.
- Chill for 1 hour for flavors to combine, then serve.
TUNA EGG SALAD
This is the recipe I use for my family and its always a hit. I use an equal amount of finely chopped hard boiled egg added to a can of tuna (I prefer the albacore tuna). For those who don't care for a strongish fish flavor in their tuna salad, this'll do it for you. It truely is awesome. Enjoy!

- Drain tuna and place in a small mixing bowl.
- Finely chop boiled eggs and add to tuna.
- Finely chop red onion (or onion of your choice) and add to tuna and egg.
- Using a fork or masher, combine these ingredients well.
- Add celery seed or celery salt.
- Add Mayo (or Miracle Whip).
- Add mustard.
- Mix everything well. Go easy on the seasoning and dressing. You can always add more to suit your taste.
