MAPLE BAKED BEANS
Since my husband raises hogs and my parents produce maple syrup, this recipe's a natural for me! I usually prepare Maple Baked Beans just for us during the winter. In summer, I'll often make it for family picnics and get-togethers.

Steps:
- Sort and rinse beans; place in a 4-qt. Dutch oven. Cover with 2 qts. cold water. Bring to a boil; reduce heat and simmer for 2 minutes. Remove from the heat. Cover and let stand 1 hour. Drain and rinse beans. Return beans to Dutch oven; cover with remaining water. Bring to a boil; reduce heat and simmer for 30-40 minutes or until almost tender. Drain and reserve liquid. In a 2-1/2-qt. casserole or bean pot, combine beans with all remaining ingredients. Cover and bake at 325° for 2-1/2 hours or until tender. Stir occasionally; add reserved bean liquid, if necessary.

POTENT MAPLE BAKED BEANS

Steps:
- Wash and pick over beans. Put beans and water in saucepan, cover. Bring to a boil. Boil for 2 minutes.
- Remove from heat and let stand 1 hour.
- Return to heat, bring back to a boil, lower heat and simmer, covered, for 40 minutes.
- Drain beans thougha colander set over a bowl. Reserve 2 1/2 cups of the cooking liquid and set aside.
- Put bacon in ovenproof casserole or bean pot. Cover with cooked beans.
- In a bowl, combine onion, salt, mustard, syrup, rum and 2 cups of reserved cooking liquid.
- Pour mixture over beans.
- Cover and bake in a 325 degree oven for 3 hours, adding the last 1/2 cup cooking liquid during the last 30 minutes of cooking.
- Remove from oven.
- Combine brown sugar and melted butter. Drizzle over beans.
- Bake, uncovered, for another hour or until liquid has evaporated.

MAPLE BEANS FROM QUEBEC
This recipe comes from Coup de Pouce. Maple beans are something we have as breakfast from time to time. A little bowl is served with some eggs, bacon, sausages... This is what I like to eat when I go for breakfast in restaurants. Posted for ZWT4 If you use vegetable oil, you'll have to add a little bit of salt.

- Wash the beans and drain. Set aside.
- In a big oven-proof saucepan, melt the pork lard. Add onions and cook at medium heat, stirring, 2 to 3 minutes or until soften. Add maple syrup, molasses, tomato paste, pepper, salt and mustard powder. Stir. Add the beans and cover with water.
- Cover and cook in a preheated oven of 250 F overnight or at 350 F for at least 7 hours (add more water if needed).

MAPLE BAKED BEANS
Taken ages ago from the website ' About ' when looking for recipes using maple syrup - I have not made these but certainly intend to have a go .Preparation time does not include soaking the beans. UPDATE - I have since made this recipe and the flavours are very mild - too mild for me so you might want to be a bit heavy handed - I also added a can of diced tomatoes and cooked them for an extra hour.

- Place beans in large saucepan and cover with cold water.
- Bring to the boil and simmer 2 minutes.
- Remove from heat and stand covered for 1 hour.
- Drain and reserve liquid.
- In a small bowl combine syrup, sauce, onion salt and mustard.
- Place 1/2 the beans in a 1 quart casserole dish.
- Top with diced pork or bacon.
- Add remaining beans.
- Pour maple syrup mixture over beans.
- Add 1 1/2 cups of reserved bean liquid.
- Cover and bake at 300 degrees for 2 hours.
- Stir occasionally and add more reserved liquid id need be to keep beans moist.

MAPLE BAKED BEANS (PARKER'S MAPLE BARN)
I've tried several baked bean recipes and this is one of my favorites. I grew up standing in line on Sunday mornings waiting for a coveted seat for breakfast at Parker's Maple Barn in NH. I was delighted that this recipe was on Food Network's FoodNation With Bobby Flay.

- Preheat oven to 250 degrees F.
- Fill a stockpot with the beans and enough cold water to cover them. Bring the water to a boil and parboil the beans for approximately 20 minutes. Drain the water and reserve for later use.
- Put together Bean Goop: In a large bowl or medium-size saucepan, mix the hot water with the sugars and molasses to dissolve the sugars. Then mix in all remaining ingredients. Set aside for use in the Baked Beans. Yield: about 1 quart.
- Place 4 salt pork cubes and half of the onion on the bottom of the bean pot. Fill the pot 3/4 full with beans. Add the Bean Goop. Fill the rest of the pot with the reserved water. Place the remaining cubes of salt pork and onion on top of the beans.
- Cover first with a layer of plastic wrap, then a layer of aluminum foil. Bake in the oven for 10 hours.
- Check beans at that time, blowing on them to see if the skin peels back. If so, they are finished. Time will vary depending on your oven and how long the beans were parboiled in the beginning. Cooking time could increase to as long as 12 hours total.
