CLASSIC CREAM PUFFS
The foundation of the perfect cream puff is light, airy pâte à choux, which is made with eggs, flour, and butter. Once the cream puffs are shaped and baked, they're filled with a rich homemade pastry cream.

- Preheat oven to 375 degrees. Line two baking sheets with parchment paper.
- In a medium saucepan over medium-high heat, combine butter, sugar, salt and 1 cup water. Bring to a boil and quickly stir in the flour with a wooden spoon. Continue to stir until a film forms on the bottom of the pan.
- Remove from heat and transfer contents to a bowl to cool slightly, about 3 minutes. Add 4 eggs, one at a time, stirring vigorously to entirely incorporate egg after each addition.
- For the egg wash, whisk together the remaining egg with 1 tablespoon water. Set aside.
- Transfer the pate a choux to a large pastry bag fitted with a 5/8-inch plain tip. Pipe 1-1/2-inch rounds onto each prepared pan. Gently smooth the pointed peaks with a moistened finger, rounding tops to ensure even rising. Brush tops with reserved egg wash. Bake until puffs rise and are golden brown, about 30 minutes. Let cool on sheets on wire racks. Puffs can be stored at room temperature for up to 1 day.
- Transfer pastry cream to a pastry bag fitted with a 1/8-inch plain round tip. Insert the tip into the opening of each pastry, and pipe to fill with pastry cream. Serve immediately.
POWDER PUFFS
My mother was renowned for her powder puffs. They cook up and cool to very dry, and will keep for a week or 10 days (I challenge you to keep them that long ;-) ) in an air-tight tin, then you bring them out, fill them, and they are as light and tender as you can imagine! Not really sure how many this recipe will make.

Steps:
- Heat oven to 190c (375f).
- Heat trays.
- Beat egg whites until stiff.
- Gradually add the sugar, beating well.
- Add egg yolks.
- Sieve all dry ingredients together twice and fold into mixture.
- Fold in boiling water.
- Place heaped teaspoonfuls of mixture on hot greased trays and bake in oven for 5 minutes.
- Remove to a wire rack and cool before storing in an air-tight container until required.
- Six hours before serving, sandwich pairs together with whipped cream, and dust tops with icing (confectioner's) sugar.

Steps:
- Melt the butter in a large saucepan over medium-high.
- Add the milk and salt to the butter and stir to combine, then allow the mixture to come to a boil (it should develop a frothy head).
- Add the flour to the butter mixture and stir with a fork until a loose ball is formed. Continue stirring for 1 or 2 more minutes.
- Scrape dough ball into a bowl and allow to sit at room temperature for about 5 minutes.
- Add the eggs 1 at a time, stirring each into the mixture until it's smooth.
- Preheat oven to 375 degrees F.
- Coat 12 muffin cups with butter liberally, including the area around the mouth of each cup. Do the same to a #9 disher (one of those ice cream scoops with the thumb lever that helps push out the scoop). Drop about half a scoop of the mixture into each muffin cup. Dust the top of each puff with a pinch of sugar (turbinado sugar works well for this).
- Slide pan into the oven and allow to bake for 30 minutes, until puffs have more than doubled in size and are golden brown.
- Poke each puff with a fork to let out its steam (so the insides don't get soggy) and remove from the pan. Allow each puff to cool slightly before eating, then dig in!

- Preheat oven to 210C (if using a fan-forced convection oven, 200C may be better) and line four baking trays with baking paper.
- In a separate bowl, beat egg whites to soft peaks, then gradually beat in sugar until mixture forms a glossy, stiff meringue. Add yolks one at a time.
- Sift dry ingredients over mixture, then fold in very gently and thoroughly. Do not stir mixture after this point. It should be firm and when spooned onto trays should not settle or run.
