CREAMY PECAN PRALINES
Steps:
- Mix light brown sugar, granulated sugar, heavy cream, butter, water and salt in a heavy-bottomed saucepan. Cook over low heat, stirring constantly with a wooden spoon, until sugar dissolves. Stir in pecans and cook over medium heat until mixture reaches the soft ball stage, 238 to 240 degrees F on a candy thermometer. If you spoon a drop of boiling syrup into a cup of ice water, it will form a soft ball that flattens easily between your fingers.
- Remove pan from heat and stir rapidly until mixture thickens. Drop pralines by the spoonfuls, 1-inch apart onto parchment paper-lined baking sheets. Let cool completely until firm. Store in an airtight container.
PRALINES AND CREAM COCKTAIL
This is a rich and decadent frozen cocktail. It's perfect served as a dessert. I found this in Louisiana Cookin' magazine. This makes one generous serving but my husband and I shared it. It was enough.

- Pour into a stemmed glass and garnish with pecan pieces.

Yield about 1-1/2 quarts ice cream (2-1/2 cups sauce).

- In a heavy saucepan, heat milk to 175°; stir in sugar until dissolved. Whisk a small amount of hot mixture into eggs; return all to the pan, whisking constantly. Cook, stirring constantly, over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°. Do not allow to boil. Remove from heat immediately., Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in cream and vanilla. Press plastic wrap onto surface of custard. Refrigerate several hours or overnight., Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. (Refrigerate any remaining mixture until ready to freeze.) Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with any remaining ice cream mixture., For candied pecans, in a heavy skillet, melt butter over medium heat. Stir in brown sugar, cinnamon and nutmeg; cook and stir until sugar is dissolved. Add pecans; cook and stir 2-3 minutes or until coated. Spread pecans onto a greased foil-lined baking sheet. Cool completely., For sauce, combine butter, water and corn syrup in a heavy saucepan. Cook and stir over medium-low heat until butter is melted. Add sugar; cook and stir until sugar is dissolved. Bring to a boil over medium-high heat without stirring. Boil 4 minutes. Stir 6-8 minutes or until mixture is caramel-colored. Remove from heat. Carefully stir in cream until smooth. Serve caramel sauce and candied pecans over ice cream.

PRALINES 'N CREAM CHEESECAKE
This is a wonderful no-bake cheese cake that always gets raves! A lovely chocolate and white marble-topped cheesecake with a layer of praline. I decorate the top of it with pecans and some of the praline mixture. My sister runs a catering business and she liked this so much it is now one of her best sellers.

Steps:
- Crust: Combine crust ingredients and mix well.
- Press firmly onto bottom and 1-inch up sides of an 8 1/2" springform pan.
- Cheesecake: For praline mixture,combine pecans, brown sugar and melted butter, mixing well.
- Set aside.
- (I pop it into the fridge to firm it up enough to crumble easily) Beat cream cheese until smooth; blend in sugar.
- Sprinkle gelatine on top of cold water in a saucepan.
- Let stand 5 minutes to soften.
- Stir mixture over low heat until gelatine is dissolved.
- Blend warm gelatine into cheese mixture.
- Gradually fold cheese mixture into whipped cream.
- fold chocolate into 2 cups of cheese mixture.
- Spread all but 1/2 cup of plain cheese mixture into crust.
- Sprinkle praline mixture evenly over plain cheese mixture.
- Spread chocolate mixture evenly over praline layer.
- Spoon remaining plain cream cheese mixture over chocolate mixture and swirl wit a knife to marble.
- Garnish with pecan halves if desired.
- Chill at least 3 hours before serving.
PRALINES AND CREAM COCKTAIL
I like to make this in the fall and winter. Very rich and smooth. Goes really good after a cajun/creole meal.

- To make the pralines combine the brown sugar, 1/4 cup sugar, 1/4 cup cream, and butter in a heavy bottomed skillet over medium heat. Bring to a boil and let boil for about 3 to 4 minutes to lightly caramelize. Use a sturdy wooden spoon to stir in the pecans and remove from heat. Keep stirring until the candy cools and the pecans are coated. Spoon onto a parchment lined baking sheet to cool completely.
- Combine the heavy cream, milk, sugar and vanilla in a large bowl, and whisk until the sugar is dissolved. Turn on your ice cream machine and pour into canister. Process according to manufacturer's directions. Just before you finish churning add the cooled pralines to the machine as well as the 1/4 cup caramel.
