Steps:

  • Boil potatoes in salted water until tender. Drain.
  • Add egg, bell pepper, onion and pimientos.
  • Fold in mayo (do not overmix).
  • Add pepper to taste.

1 1/2 lbs potatoes, peeled
4 eggs, hard boiled and chopped
1/2 green bell pepper, chopped
1/2 onion, chopped
4 ounces pimientos, drained
1/2 cup mayonnaise (add more to suit your taste)
salt and pepper, to taste

Steps:

  • 1. Boil Potatoes to al dente about 15 minutes drain boil eggs until hard boiled about 12 minutes put in fridge
  • 2. Dice onion,red pepper and apple
  • 3. mix all the ingredients together in a large bowl put in the fridge for an hr or more to chill...Tip making this the day before saves time and gives the ingredients time to merry together

6 medium potatoes
1/2 medium onion
1/2 medium red pepper
3 medium apples
3 Tbsp mustard
3 Tbsp sweet relish
5 medium eggs
4 Tbsp sugar
salt and pepper to taste
1 1/2 c mayonnaise

The still-warm potatoes absorb more of the dressing and seasoning than they would if still cold. Fold the potatoes and eggs into the dressing mixture ensuring they are evenly coated. Add more mayonnaise as desired.
