CHICKEN CORDON BLEU I
This entree is easy and delicious! It's one of my husband's favorites! Try to use the largest chicken breasts you can find so you'll be able to roll them easier.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
- Pound chicken breasts to 1/4 inch thickness.
- Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
- Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

Steps:
- Preheat oven to 375 degrees. Melt butter in glass baking dish.
- Lightly flatten chicken breasts between plastic wrap with mallet. Lay 1 slice of ham and 1 piece of cheese on flattened breast, fold in half and seal close with toothpicks. Repeat process for remaining chicken breasts.
- Coat each piece with flour, then eggs and then bread crumbs. Place chicken pieces in glass baking dish. Turn to coat with butter.
- Bake for 40-45 minutes or until golden brown. Serve with parselyed rice and steamed broccoli.
PVW'S HEALTHIER TAKE ON CHICKEN CORDON BLEU
I like Chicken Cordon Bleu... but not as much as it likes to stick to my stomach, rear, and legs. I've created this healthier version to serve instead, and my family really enjoys it. I hope you do too!

Steps:
- Preheat oven to 350 degrees.
- Butterfly each chicken breast (cut it length wise with out cutting all the way through). Open it up and sprinkle the inside of the chicken with seasoning mix (Mrs. Dash).
- Place one slice of cheese inside each of the chicken breasts along with 1-2 slices of ham. I like to fold the cheese in half so it fits better in the chicken and is not hanging out.
- Sprinkle a little bit of the 1 teaspoon of garlic on each folded combo of ham & cheese. Then fold the chicken over to close like a packet. Secure the chicken roll closed by using a toothpick.
- Sprinkle seasoning mix on outside of chicken (I also like to sprinkle the bottom as well). Place in an oven safe dish and cover with foil.
- Bake chicken for 30-40 minutes or until fully cooked.
- To get a nice golden brown color you can remove the foil after 15-20 minutes or so. Or you can broil the tops for 3-6 minutes when chicken is fully cooked.

QUICK CHICKEN CORDON BLEU

Steps:
- Preheat oven to 400°F.
- Sprinkle chicken with 1/4 t pepper and salt. Combine cheeses in a bowl. And the remaining 1/4 t pepper, breadcrumbs, parsley and 2 t oil in another bowl.
- Heat the remaining oil in a large ovenproof nonstick skillet over medium heat. Cook the chicken until browned on both sides, about 2 minutes per side. Move the chicken to the center so all pieces are touching. Spread with cheese mixture, sprinkle with ham, then top with breadcrumb mixture.
- Bake until the chicken is no longer pink and registers 165F internally, 5-7 minutes.

- Preheat the oven or the air fryer to the temperature required for your cooking method (see below). Prepare the egg wash by beating the egg and water in a shallow bowl. Prepare the breading station by mixing the bread crumbs, parmesan, and seasonings together. Set aside.
- Preheat oven to 450°F. Place chicken on a sheet pan (I like to line it with parchment paper or a silicone baking mat for easier clean up). Once chicken is placed inside the frying basket (chicken pieces should not be touching), "fry" for 12-15 minutes. When done, chicken should be crisp, golden brown, and the internal temperature should reach 165°F. Remove, let rest a couple minutes, then serve.
