There are many, fancy variations on this basic recipe. This recipe works with many types of bread - white, whole wheat, cinnamon-raisin, Italian or French. Serve hot with butter or margarine and maple syrup.

Steps:
- Beat together egg, milk, salt, desired spices and vanilla.
- Heat a lightly oiled griddle or skillet over medium-high heat.

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk eggs, milk, and salt together in a bowl; pour into a shallow dish. Soak bread slices in egg mixture until saturated.
- Spread softened butter over the bottom of a 10x15-inch jelly roll pan. Sprinkle brown sugar over the butter. Arrange bread slices onto sugar in a single layer; sprinkle with cinnamon.

QUICK AND ELEGANT FRENCH TOAST
This is the first thing I ever actually "cooked" for my fiance. It's quick and easy, and you can substitute different ingredients for the toppings for a totally different meal every time!

Steps:
- Mix whipping cream, eggs, vanilla, and cinnamon sugar in a large mixing bowl.
- Dip bread in egg mixture.
- Cook until golden brown in skillet coated with melted butter or cooking spray (I like to add more butter in between each batch).
- Meanwhile, mix jam and juice in a small saucepan and simmer until slightly thick and syrupy.
- Blend cream cheese and fruit in blender or food processor until smooth. If you are not using whipped cream cheese, you may want to warm it slightly so it will mix better.
- Top toast slices with syrup and/or cream cheese mixture. The syrup serves best from a jar with a spout, like you might use for a homemade salad dressing. A leftover syrup bottle would also be good.
- Variations: Substitute other flavors of jam and/or juice, or a different fruit in the cream cheese mix. A small amount of nutmeg is also good in the batter.

FRENCH TOAST
Eggy bread, pain perdu or French toast - this classic breakfast dish has plenty of names and just as many options for toppings. We like it with fresh berries

Steps:
- Whisk together the eggs, milk, cream, vanilla and cinnamon. Lay the brioche slices in a single layer in a shallow dish and pour the egg mixture over them. Allow to soak for 2-3 mins, then carefully turn over and soak for 2 mins more.
- Heat 1 tbsp of the vegetable oil and butter in a non-stick frying pan over a medium heat until foaming. Carefully lift 2 slices of the soaked brioche out of the dish and add to the frying pan. Fry for 3 mins on each side, until golden and crisp, then place on a wire rack over a baking tray in a warm oven while you repeat with the remaining slices.
- Serve dusted in icing sugar and scattered with fresh berries, if you like.
